Customer decided not to go further with their mortgage application after credit was run and income was calculated. The required disclosures were given, etc. About a week later the customer decides they do want to go forward with the loan. Am I correct in the assumption that we would need to redisclose all upfront disclosures? (the time frame the customer decided not to go with us, GFE expired.)

imho, this one is totally up to you. You could start all over with new app and disclosures OR you could allow the customer to change their mind and continue from where they left off. Given that they're probably deciding to move forward based on the prices you quoted in the first GFE, that's probably the only way you're going to keep this loan.
