We had a POS come through an customers account from a online gambling site. There was a hold on the initial authorization for 3 days but the collection didnt come thorugh till 8 days later which the customer withdrew the funds on the 5th day. Is there anything we can do? We tried a charge back but they came back and said the authorization was approved.

The card associations have requirements for prompt batching and presentment of transactions, but I don't think you will be successful in trying to push this back. You do have a right to post the debit to your customer's account and attempt to collect it like any other overdraft.
