We received another "notice" from a poster company that our "labor law" posters were out of date as of March 1.
Does anyone know exactly what was changed?
We seem to get these notices about every 6 months and are not sure they are legitimate.

Nothing has changed. It's a way to generate income for the poster printers. As long as your poster reflects the correct minimum wage, it should be correct.
