As of now our bank gives our customers the option of having their checks truncated. Is it possible to switch this around and truncate all accounts, unless customer request to receive their checks? What statements, if any, should be documented on disclosures?

you can truncate all, and charge for anyone who wishes to receive physical items back, as long as the images are good.
