Jackie's Onion Pie

Preheat oven to 350.

CRUST
30 crushed crackers (something like Saltines works well)
1/2 cup melted butter

Mix together crushed crackers and melted butter to form a crust. Press into a 9 x 9 baking dish or individual quiche-like pans.

FILLING
6 cups onions, sliced thin
1/4 cup butter
1 1/2 cups milk
3 beaten eggs
1/2 t. salt
1/2 t. pepper
1/2 c. grated parmesan cheese (or Italian blend cheese)


Saute 3 cups chopped onions in 1/4 cup butter until the onions are golden. (This will take quite a while.) In the meantime, scald 1 1/2 cups milk. Cool. After the milk is cooled off, add to it 3 beaten eggs, 1/2 t. salt, 1/2 t. pepper. Put the onions on top of the crust. Pour the milk/eggs mixture over the onions. Top with 1/2 cup or so of grated parmesan cheese. (You could use romano or pecorino or something similar.)

Bake at 350 degrees for 30 minutes in a preheated oven. If you're using individual quiche dishes, bake for a shorter period of time.
