Lemon-Marinated Veggies
1/3 c olive oil
1/3 c. red wine vinegar
1/3 c fresh lemon juice
2 T fresh basil
1 T Dijon mustard
1 clove garlic minced
1/8 tsp salt
1/8 tsp pepper
¾ lb. baby carrots
1 red pepper cut in bite size pieces
1 yellow pepper cut in bite size pieces
½ lb fresh mushrooms, stems removed
1 c cherry tomatoes
1 can green beans
Combine first 8 ingredients. Cover and shake well. Set aside.
In a saucepan, cook carrots covered for 8 minutes more or until they are crisp-tender. Drain and rinse with cold water.
Combine carrots and the rest of the vegetables in a large ziplock and pour vinaigrette on top.
Seal and refrigerate for 4 to 24 hours, turning bag occasionally. You can serve the salad chilled or room temperature.
