Chicken Chili
1 very large onion, diced
5 cloves of garlic, minced
2 sweet red peppers, diced
4 diced jalapenos (at least)
3 T. chili powder
1 1/2 t. cumin seeds
1 t. ground coriander
pinch of cinnamon
6 poached chicken breasts, cut into bit size pieces
32 oz. tomato puree
8 oz. sliced, drained, black olives
1 C. beer.

Combine all ingredients well.
Simmer for 2 hours.
Serve over rice. Garnish with sour cream, scallions, and shredded cheddar cheese.
