Marinated Leg of Lamb
Marinate 2 lbs. 1" cubes of boneless leg of lamb in the following:
1 cup olive oil
1/2 cup fresh lemon juice
1/2 cup white wine
6 cloves of garlic (chopped fine)
Fresh oregano, chopped (1/4 cup) or dried oregano(2 Tbls)
salt and pepper to taste
Marinate at least 24 hours. Thread on skewers and grill over charcoal until medium rare and browned.
Serve with plain yogurt, chopped tomatoes and chopped seedless cucumbers (chopped raw onions are good, if you can take them) in warm pita bread.
