Mr. C's Spicy Wontons
2 pounds Pork Sausage
1 med. onion (fine chop)
1 tablespoon garlic (fine chop)
1 teaspoon lime juice
1-2 tablespoon Tamari
3 teaspoons brown sugar
1 teaspoon ground chipolte
1 teaspoon cilantro (or mint is also good to offset heat)
1 1/2 cups grated cabbage (buy the mix in the bag and save time!)
Brown the sausage and break it into small chunks. Remove the meat and set aside, drain off most of the fat. Sweat your onions and garlic together in the few leftover drippings until soft and translucent. Add the tamari to help deglazed the pan and loosen up any good crusties to your onion garlic mixture. Return the meat to the pan and add the chipolte, cilantro (or mint), and the lime juice. Stir this mixture until everyone in the pan is good and happy. Add the brown sugar now and taste for that balance of sweetness and spice. If there isn't enough sweet it's okay to add a little more brown sugar. Remove the mixture from heat and place into medium bowl (the mixture shouldn't be to wet at this point) and add fresh cabbage to wilt while the mixture cools off some. The filling is now ready for your wonton wrappers. After filling the wrappers you can pan fry until crisp or just steam until the wrapper is soft to save a few fat grams
