Eggplant Strata
A large eggplant, peeled and sliced in 3/8 inch slices
2 large onions thinly sliced
1 large green pepper thinly sliced
2 Boca burgers shredded
1 can of stewed tomatoes
1/2 cup of Fat-free Parmesan cheese (shaker can)
Put the onions and green pepper in a large skillet and saute until soft. Add the Boca burgers and stewed tomatoes. Cover; lower heat and cook for 10 minutes. Put a layer of thinly sliced eggplant in a 9x18 pan and cover with a layer of the mixture from the skillet. Repeat until all the eggplant and skillet mixture is used. Shake the cheese over all. Cover and bake at 400 for one hour.
