(Disclaimer) If you don't want to know...DON'T READ THIS!

Got a question. I'm curious if anybody out there knows how to "process" coon. I know if you are giving it to someone, you have to leave at least one paw intact. Other than that...I know with deer you cure for about 7 days before processing...anyone know the best way to do a coon? I mean if I bagged one this weekend, but wanted to keep it for New Year's...what's the best way?

Well, thanks Santa...and yeah..I wouldn't throw anything in there (freezer) without tackling that task first! wink Well..except maybe a snake.

Skittles, I personally don't know...but I've been promising a friend one for the last 2 superbowls and I really want to try and make good this year!

I would probably try it..I understand it's pretty good, at least as opposed to possum...which is greasy/stringy... sick

worse than boiled okra.

Oh..we don't tie any of that off on deer...but we do cut the scent/musk gland off immediately.

Squirrel/rat = same thing to me = No way, thank you
Have eaten deer = good (especially summer sausage and dry beef)
Frog legs - but wouldn't do it today
Snails - wouldn't do it today
Aligator = good

BUT - SNAKE - NO WAY, NO HOW, UH-UH!

I used to eat fish eyes (the lenses) when I was little...they were chewy and my dad used to say thats what tapioca was made of. I wouldn't dream of eating one today!

A surprising source of information on this type of thing is the Joy of Cooking - they have a whole section on game, what glands needs to be removed, etc. It's quite entertaining to read!

sick i will take my chances and refrain

and even though I am a good German in most respects I can't take sourkraut either

my dear grandmum used to make grautbrook with sourkraut, I still gag when thinking of the smell......

I love the smell of sauerkraut roasting! (but that most likely has to do with my Polish grandmother who we lived with, making it all the time)

This year, it will be pork with homemade sauerkraut that we just got at a local historical society's Christmas open house.
