I like sauerkraut and pork!
Cute, Pale...a coon skin hat...maybe I'll make one of those for her too.
I just talked to BF..he said he'd get his cousin to get one and fix it up for me tomorrow night. Yeah!
I didn't even think about Joy of Cooking...I'll check that tonight.
I don't remember them going into inital "prep" tho!
Oh, and Pale..if you mean black-eyed peas..you HAVE to have BEP's and cornbread for New years! You HAVE to! It's a law!

yeah I can't wait to fix pork and sauerkraut and mashed potatoes for New Years. hmmmmmmmmmmmmmmm good I agree pjs! This year I think it will be hot pork sandwiches w/kraut and mashed potatoes on the side, while watching the Rose Bowl!

One of our employees brought barbecued beaver one day. It didn't look too bad. We thought it was pork but after we found out what is was very few of us tried it. Those that did said it was quite good.

...I know with deer you cure for about 7 days before processing... Actually, with deer, you want to get it processed ASAP. Curing is to allow the fat to marbleize, which is done with beef, but deer fat is different from beef fat, so get it processed/frozen ASAP for fresher meat.

...I know with deer you cure for about 7 days before processing... Actually, with deer, you want to get it processed ASAP. Curing is to allow the fat to marbleize, which is done with beef, but deer fat is different from beef fat, so get it processed/frozen ASAP for fresher meat. Beg to differ with you on this one. I learned from a professional game hunter how to cure deer. You cure it for that period of time to get the game out of it...then it's good for about a year in the freezer before the gaminess mysteriously reappears.
