This is fantastic! We're having a covered dish at work tomorrow and this is what I'm bringing.

Pecan Pie Cobbler

Ingredients
Crust:
1/2 cup butter, melted
1 cup self rising flour
1 cup sugar
1 cup milk
Filling:
1/3 cup butter
3 eggs, slightly beaten
2/3 cup sugar
1 cup dark karo syrup
1 cup pecans, chopped

Directions
For crust, pour melted butter in a 9 x 13 casserole dish.
Mix the next 3 ingredients and pour over butter.
For filling, mix together and pour over crust mixture.
Bake at 350 degrees for 35 to 40 minutes or until done.
Layer the ingredients as listed and do not stir pan.

It's not on mine either, but I figure I won't have an opportunity to over do it with the number of employees that will be eating! I'll be lucky to get a very small serving! laugh

Sorry but I beg to differ.
A Cobbler must be made with fruit smile & pecans are not fruit sick.
Support for my position - - - this is direct from mir-web online dictionary
1: a mender or maker of shoes and often of other leather goods
2archaic : a clumsy workman
3: a tall iced drink consisting usually of wine, rum, or whiskey and sugar garnished with mint or a slice of lemon or orange
4: a deep-dish fruit dessert with a thick top crust

I also beg to differ. This from Wikipedia:

Cobbler is a traditional dish in both the United States and the United Kingdom, although the meaning of the term is quite different in each country. In the United States, it is usually a dessert consisting of a fruit filling poured into a large baking dish over a batter that rises through when baking. The batter forms as a dumpling within the cobbler as well as a crust for the top. In the United Kingdom it is usually a savoury meat dish, typically a lamb casserole, which is covered with a savoury scone-like topping—each scone (or biscuit) forming a separable cobbler. Fruit-based versions are also increasingly popular in the United Kingdom—although they still retain the separate cobbler (or biscuit) topping of the meat version—and savoury or meat versions are not unknown in the United States.

I learned long ago that when bringing in dessert food for parties and birthdays it is difficult to do healthy. I make a nice apple crisp that is really diet friendly and a peach blueberry crisp that is great - but I can't put them up against chocolate cake and brownies!

The last few birthdays we have celebrated here I have brought in home made apple pie (yes I made the crust too), triple chocolate brownies (from scratch), chocolate marble cheesecake (from scratch), and just a few days ago milk chocolate - pretzel - peanut bark. My secret is that I don't eat anything I bring in, I just enjoy watching other people eat it!

I like it when we have "Soup Day" because I can make healthy good tasting soup - it is the desserts that are tough. Last year my minestrone was a big hit.

Thomas - I would love to get a recipe for the peach/blueberry crisp. I make apple crisp and rhubarb crisp also, but we raise peaches and blueberries and it would be great to find another way to serve them.

The healthy option, of course, is just to serve peaches and blueberries mixed together, with possibly some blackberries if they're ripe.

I wish some of our more health conscious people here had that attitude about desserts, thomasj. Last time we did potluck someone made chocolate delight with sugar-free pudding and whipped topping. That would have been fine, but she didn't let anyone know ahead of time that it had been made sugar-free, and artificial sweeeteners trigger my migraines. I was hurting badly within an hour, and it wasn't until later that afternoon that I figured out why.

Blueberry Peach Crisp

Ingredients:

10 oz fresh or frozen blueberries
1 lb of fresh or frozen peach slices
1/4 cup apple juice
Topping
1/2 cup almonds
1/2 cup rolled oats
1 cup pitted dates
2 TBS apple juice
1/2 tsp cinnamon


Directions:

Preheat over to 350. Place blueberries in the bottom of a square 8 inch baking pan. If you are using frozen, make sure they are completely thawed and drained of excess water. Place peach slices on top of blueberries. If they are frozen make sure they are also thawed and drained of excess water. Drizzle 1/4 cup apple juice over fruit.

Remove pits from dates and place in the bowl of a food processor along with oats, almonds and cinnamon. After running for a minute and dates are blended with oats and almonds, add apple juice, and mix well.

Place mixture evenly over peaches and blueberries, and bake uncovered for about 45 minutes. Serve warm or cool.

What is so bad is that I don't normally bake and do very little cooking since it's just me at home. I've got to buy everything listed in the recipe so that I can make it. I'll give the leftover ingredients to my DIL so I won't be tempted to make it again. frown

Soup day sounds interesting. Does everyone just bring soups? Do you only do this in cold weather? Some people around here won't eat soup in hot weather - don't understand that since they eat other hot food. confused

Soup day is in November. About a dozen people sign up to bring in various soups in slow cookers to keep them warm. Many more bring in other foods to go with the soup. Even with a dozen soups, if you eat lunch after 1PM you may have a hard time getting the soup you want (NO SOUP FOR YOU!). It is a great day!

That sounds like fun. If I cook, it's usually a soup or chili.

When my son was in the youth group at church, the MYF would have soup and salad lunches after church two or three times a year and would sell tickets to the congegation. We'd call all of the little old ladies (of which I'm one now :D) for their donations of salads. The other youth chaperon and I would work most of the Saturday before cooking three or four different kinds of soups. One time the salad donations looked well below what we'd expected and what we thought would feed the people lining up to eat. We told the youth they could not eat until everyone else had eaten. Well, it was the fishes and loaves story all over again. We had enough soup and salad for everyone and more left. We've laughed about that often over the years. laugh

I know your pain - literally. I'm allergic to Nutra Sweet (aspartame) and get migraines (and possibly seizures - I had one they could never explain otherwise). I am always nervous at pot lucks.

I have a few friends and family members with serious food allergies (like peanutes, fruits, etc.)so I always disclose ingredients when I bring a dish anywhere.

After reading about all of these goodies I really want to go home and make a peanut butter pie (low fat all around, but tastes pretty wicked!).
