I'm looking for a 4th of July recipe that looks great to wow my friends with on the 4th. Any ideas out there? I've done the cake with the berries to look like the flag.

If you're looking for an entree, you could always make enchiladas with blue corn tortillas, red enchillada sauce, chicken-filled and topped with cojita or quesadilla cheese.

Patriotic Potato Salad

This red, white and blue potato salad will be the star attraction at any Fourth of July cookout. All-blue potatoes are slightly starchier but the same color as purple Peruvians, which are technically fingerling potatoes — smaller, thinner potatoes. Both work well, and both get their brilliant color from iron. Once cooked, the color will fade, but try this trick to minimize fading: Add a couple of splashes of white vinegar to the cooking water.

Makes 4 to 6 servings

2 pounds total Yukon gold, red bliss and all-blue or purple Peruvian* potatoes, with skins

A couple of splashes of white vinegar

2 tablespoons olive oil

2 tablespoons white balsamic vinegar**

1 tablespoon water

2 tablespoons fresh basil, thinly sliced

2 tablespoons parsley, thinly sliced

6 to 7 cranks of freshly ground black pepper

A generous sprinkling of salt, to taste

2 stalks celery, diced (about 1/2 cup)

4 radishes, very thinly sliced (about 1/4 cup)

Scrub the potatoes well, rinse thoroughly and pat dry. Cut into 1-inch pieces. Add to a medium-size pan of water (with a couple of splashes of white vinegar, if desired). Bring to a boil, reduce to a simmer and cook until potatoes are tender when pierced with a knife, yet still hold their shape, 8 to 10 minutes. Drain and cool.

Meanwhile, whisk olive oil, white balsamic vinegar, water, herbs, salt and pepper in a small bowl. Set aside.

Drain potatoes and place in a large bowl. Add celery and radishes. Pour vinaigrette over the potatoes, and toss gently until well-coated. Serve at room temperature or chilled.

*Blue and purple potatoes are available at specialty markets as well as many major supermarkets.

**White balsamic vinegar is made from white wine vinegar and grapes. Because it is milder than traditional brown balsamic vinegar and doesn't stain food, it's preferable for this colorful salad. It can be found at specialty markets and many major supermarkets. Rice vinegar can be substituted.

Bobby Flay uses the heck out of em. If you have a nicer grocery store, they'll have 'em there. You could also look in health food stores.

IDK where you are in the country but in Ohio I can get em at Meijer (usually).

I just looked online and I have never done this, but I guess I could try to make homemade tortillas (with some blue food coloring). Great ideas. I love the potato salad as well. Now I could have a main entree, salad, and now I need a dessert!

Some manufacturers don't call them bomb pops anymore - I noticed the change when I was in DC last year. I think they called them Liberty Pops...here's Blue Bunny's version with the original name. Very tasty!

I'm sure you've seen them: the red/white/blue rocket-shaped popsicles, often sold by neighborhood ice cream trucks.

We are a very rural town, with no ice-cream trucks! However I have seen these in the stores and my kids do like them.

July 4th Trifle:

1 angel food cake, cubed
4c cherry pie filling (strawberry and raspberry work, too)
4c blueberry pie filling
lots & lots of whip cream
Double handful fresh cherries and blueberries

In a trifle dish, layer cake, pie filling, & whip cream (in that order) in whatever color scheme you like. Repeat layers until the dish in full, topping with whip cream and a scattering of fresh berries in both colors.

My mom's July 4th Jello dessert:

2c fresh blueberries
2c fresh strawberries (sliced)
blue Jello
red Jello
large tub Cool Whip

Prepare Jello. Pour each color into it's own pyrex casserole dish, scattering blueberries into the blue and starwberries into the red. When set, cut into 1" cubes and layer in large clear serving bowl (punch bowl usually works best). Top with Cool Whip.

red white & blue nachos:

Blue corn tortilla chips
taco filling
salsa
shredded cheese
sour cream

Blue chips go on the bottom, followed by taco filling, salsa, cheese, and sour cream on top. Sometimes I can find mixed packages of the tortilla chips with both blue and red.

Bailey, my mom can actually somehow layer the different colors in one dish while they are liquid. I guess it's part of being that generation: they know jello molds. wink

Her *real* rwb jello mold (that I can't give you the method for because I'm jello inept):

In one deep pyrex casserole, layer:
chopped pineapple
blue jello with blueberries
red jello with strawberries
cool whip
