In my Strappy Heeled Sandals!
Moo Shu Beef Lettuce Cups from WW

serves 1 = 4 pts


cooking spray
4 oz uncooked lean ground beef (7% fat)
1/4 c thinly sliced yellow oninon (I used red)
2 tsp minced fresh ginger root
2 tsp minced garlic
1/4 c thinly sliced bok choy
1/2 c thinly sliced red bell pepper
1/2 c thinly sliced button mushrooms
2 tsp low sodium soy sauce
2 leaves bibb lettuce**

Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add beef, onion, ginger and garlic; cook until beef is browned and onion is soft, breaking up meat as it cooks, about 5 to 7 minutes. Add bok choy, pepper, mushrooms, and soy sauce; cook, stirring occasionally, until bok choy is wilted and pepper is tender-crisp, about 3 to 5 minutes. Spoon about 1/2 cup of beef mixture into each lettuce leaf.

** I wanted rice noodles so I gave up my bibb lettuce and spooned the beef mixutre over the noodles.

Keep 'em coming Search! I think I'll add this one to the rotation as well. Do you think it would be okay to substitute cabbage for the bok choy? I've seen bok choy in the stores around here but it hasn't look very good.

Well, you're not alone. I was on vacation for 10 days and now I'm up just over 3 <although down from the total 'high'>. I just have to get on the bandwagon, which I did on Tuesday. Remember - every day starts day 'one' all over again.

Ok, after two weeks in Hawaii and a week at the Atlanta ABA conference I am glad to say, I weighed myself this morning and to my surprise weighed 265.8. After three weeks of eating out. SO, I am am happy with that ability to maintain. Now to start loosing some.

O'Tigg, yeah, losing weight can be so frustrating. Total so far, I've lost 10 pounds. My clothes fit so much better and some are actually pretty loose. I want to lose more but it's hard to find time to exercise regularly. Along with my full time job, I am also going to graduate school full time. There's not enough time in the day! I just try to take it one day at a time. smile

Well, just got to keep on going... we can do it, slowly but surely.

Went down two more this week thanks to the flu so now I'm down 10 and have worn a pair of my smaller pants the last two days!!

I'd like to get rid of about 8 more and then I'd be content. I joined the gym the other day too since my cycling days are limited.

good for you boatn shasta, that has to feel great!

i am getting frustrated, i have been counting calories (eating 1400-1500 a day) and exercizing (20 minutues on my treadmill about 4 days a week) ... i was down 2 lbs on wednesday and now am back up those 2. how can i gain 2 lbs in 2 days? i have never had so much trouble losing weight before.

Maybe it's just water weight? Maybe try upping your treadmill time an extra 5-10 minutes to get that matabolism going. It seems to get harder to take off the pounds than it used to!!

Well.... I'm down .2 this week. I was a lil' bummed last nite as it's the lowest amount I've lost since I started... but... I guess a lil' loss is better than nuttin' at all!

I haven't weighed recently, but I'm still dropping sizes in my clothes, so I know I'm losing inches. The exercise is going very well. I decided to get my 12-year old son a gym membership and he started going with me yesterday. He wants to drop some weight, bulk up, and keep his body conditioned for next year's football season. I was a little worried that he'd be a distraction from my daily workouts, but it actually turned into a competition this morning. We were trying to see who would post the greater distance on the elliptical. I'm hoping we can do that more often & make it fun for both of us.
