This is a great chili recipe and makes quite a bit. I made 3 batches for a soup supper at school and we sold out of it before others that just had one small crock pot!

Three Bean Chili

4 lbs ground beef
2 onions, chopped
5-6 cloves minced garlic
1 tbs kosher salt
pepper

sauté the above until brown…drain

Add
1 lg can tomato juice
1 can beef broth
2 cans diced tomatoes
1 can Rotel tomatoes
3 rounded Tbls chili powder
2 tsp Cumin
2 cans chili beans
1 can black beans..rinsed and drained
1 can kidney beans…rinsed and drained
1 to 2 jalapeno peppers, seeded and minced (more or less to taste)
salt and pepper to taste!

I had chili this weekend, even though it was 78 degrees...

Hormel - open can, heat, dump in bowl, add cheese and fritos, enjoy...prep time: 2 minutes

Happy, if you leave that can of Hormel in your car on a hot Summer day you can drastically reduce that prep time! In Winter, just wedge it near the exhaust manifold of your car.*

I got a new cooking magazine sent to me the other day. Cuisine at Home. Tried two recipes - French Onion Salisbury Steak which is a salisbury steak served on cheese toast with the yummy french oniony part thickened and ladeled over the top. What a fab way to fancy up ground beef.

Had Chicken Picata tonight. I'll cut back on the lemon a bit but everyone loved that too.

In true Southern fashion of 'if it ain't fried, it ain't cooked' my daughter deep fried spinach to go with the picatta. Once the oil is really hot it only takes a minute to fry it and it's yummy!

Minestrone will be in the crock pot for Tuesday.

I made pasta this weekend (one batch semolina, one batch whole wheat flour) and while it wasn't soup (I made lasagna, marinara, pesto and alfredo sauces) it did make for a fulfilling meal.

Made ham & beans with cornbread yesterday. Great warm up meal.

I also have chili makings for this week smile

BaBo- What kind of pasta? Do you have one of those fancy rollers? I've always wanted to make homemade pasta but am not sure if it's worth the effort.

One was a food processor plain (semolina flour) pasta and the other was whole wheat. I do have a clamp-on pasta roller. It took a couple of practice sessions to get the texture down, but it's cheap to make so no real loss. It's worth

Buccs, always use the clamp on roller for pasta... do not ever use a pasta extruder, they are just nasty!

I'm making a batch of Elk Chili tonite for my husband. He loves it and says this will be the perfect week for it since our temps are supposed to be below 20 this week with wind chills in the minus zero area.
