Believe it or not, I actually found a really good vegetarian chili recipe I made for guests at our NYE party.

Serves 8

2 tablespoons vegetable oil
1 large onion, chopped
4 large cloves garlic, minced
3 tablespoons chili powder
1 medium-size sweet green pepper, cored, seeded and diced
1 medium-size sweet red pepper, cored, seeded and diced
1 medium-size zucchini, diced
1 medium-size yellow squash, diced
1/2 teaspoon dried oregano
1/4 teaspoon ground red pepper (cayenne)
1 can (14.5 ounces) stewed tomatoes
1 can (11 ounces) corn kernels, drained
1 can (15.5 ounces) black beans, drained and rinsed
1/4 teaspoon salt
Accompaniments, optional: cooked rice, sour cream and shredded cheddar cheese


Heat oil in 4-quart pot over medium heat. Add onion, garlic and chili powder; saute for 5 minutes. Add green and red peppers; saute 5 minutes. Add zucchini, squash, oregano and ground red pepper; saute for 5 minutes. Add tomatoes; cook 10 minutes. Stir in corn, black beans and salt; cook for 5 minutes.
Serve with the accompaniments, if desired.

For economical purposes, we've decided to shuffle more vegetarian dishes into our menu, and this is one with which we can live.

Hey BB, since you're looking for veggie alternatives - here's my 5 bean chili recipe (can be done stove top or crock pot):

2 cans dark red kidney beans
2 cans black beans
1 can light red kidney beans
1 can red beans
1 can pinto beans
2 yellow onions, roughly chopped
1tbsp minced garlic
1 sm can tomato paste
1 lrg can crushed tomatoes
1 half bottle spicy V8 (just enough to provide cooking liquid)
chili powder
ground cumin
cayenne pepper
black pepper
salt

Heat about 2 tbsp oil in bottom of large heavy pot, sweat onions just until they begin to soften and add garlic. Reduce heat and add crushed tomatoes. Drain beans and stir in along with V8 and tomato paste. Season to taste and leave on slow simmer for about 1 hr. Gets hotter as it sits!!! Also good with cooked rice stirred in, or add 1 lb cooked ground meat for non-veggie. Makes about 20 servings.

Soups are wonderful! You can throw almost anything in there and it will be good! You all are making me hungry!! mad grin

One of my favorites, kinda like a Navy Bean Soup:

Leftover ham bone
Bag of small white beans
Bay Leaf
Parsley
1 chopped onion
As much garlic as you like (I like lots)

Soak beans overnight
Simmer above ingredients for 1 hour

Add chopped potatoes & carrots
Simmer for another hour

Shred meat & remove bone

Salt & pepper to taste.

This usually comes out thicker than a normal soup & if you want it thicker just cook it longer. It's great on a cold day thick, warm & yummy. My husband loves putting this over a big slice of bread, which I guess is good too.

5 cups water
2 tbsp chicken bouillon (or 1 cube per cup of water)
1/4 cup chopped onion
1/3 cup grated carrots
1/2 tsp dry mustard
1/2 tsp paprika
1 can beer
2 cups half and half
3/4 cup flour
1/2 cup butter
1 (8 oz) jar Cheez Whiz

Combine first six ingredients; bring to a boil and simmer 20 minutes. Add beer and half and half. Mix flour and melted butter to make roux. Add gradually to soup stirring constantly. Add Cheez Whiz and stir until melted.


Don't know how I missed this on the first read through - sounds yummy! I'll have to make it next time we get a cold snap and hubby is home. I suppose beer bread would be an appropriate side dish? grin

We had BLTs with ours. It was very easy to make and came out great! My husband had two huge bowls and he isn't a big eater. He suggested "the next time I make it" that some potatoes and celery would be good added to it. Guess he wants to see it again, huh?

Hmmmm...the potatoes do sound like a good addition. And maybe a dark bread to go with it? OH! And some fried sausage! I think the hubby will like this very much...it certainly sounds like 'man food.'
