Looking for My Happy Place....
I just made this for lunch:

1/2 cup low sodium V8 juice
1/2 cup low sodium chicken stock
1/2 cup frozen mixed veggies
1/8 tsp dried herbes de provence
1/2 cup cooked brown rice
salt & pepper to taste

Put first 4 ingredients in a good size microwave proof bowl and cover loosely with saran wrap. Nuke on high 3 minutes and stir. Add rice, recover and nuke another 2 minutes on high. Salt and pepper to taste.

Makes one yummy serving. smile

a mixture of dried herbs (sold with the above name) including fennel, basil, lavender, rosemary, etc. Italian seasoning would work good too. smile

I was keeping it simple and low fat. You could always throw in a 1/4 cup or so of grilled chicken or other cooked meat if you have to have it.

So no go on the cabbage diet? I am tempted to try it, if just for a week. I'm sure I'll be climbing the walls and biting my press-ons by Day 3, but I figure I gotta give it a try.

Your SO, did he lose any weight? My plan of attack is to have a yougart for breakfast, a Lean Cuisine for lunch, and then a gallon of cabbage soup for din-din. I have modified the recipe I found online to add some extra veggies, so it'll be more like a vegetable soup than anything else.

I am trying to give my pantygirdle a break in 2010! smile

Mary, nope. No weight loss just gut-wrenching cramps.

I'd suggest many (6-8 or more) smaller meals throughout the day incorporating fruits and veggies. Stay away from processed foods and most sugar. Plus a healthy dose of bacon always seems to help. All things in moderation, darling.

Here's her recipe for "Pig Candy"

Pig Candy Recipe

You start with bacon - and don't y'all just know how I purely love a recipe that starts with bacon. The fat is the whole point of the bacon. If you're interested in the red part, get a ham or something. I mean, really.

So anyway, you start with bacon, and the only other ingredient is brown sugar - and do I really need to say the dark brown kind? You just roll the bacon in the dark brown sugar and then you bake it (at 350 F. for about 20 minutes or so, depending on your oven and also how you like your bacon - put it on a rack on a cookie sheet, and you don't even have to turn it over!) - and voy-ola! Pig Candy!

Here is a recipe I'm going to try out this weekend during our cold snap:

Italian Wedding Soup

INGREDIENTS:
¼ pound extra-lean ground beef
¼ pound ground ground pork
1 egg, lightly beaten
2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
6 cups chicken broth
1 cup beef broth
2 cups thinly sliced escarole (or frozen spinach)
½ cup uncooked acini di pepe or orzo pasta
½ cup finely chopped carrot
2 stalks chopped celery

DIRECTIONS:
1. In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls. Bake or sauté before adding to broth (lessens grease in soup.).
2. In large saucepan, heat broth to boiling; stir in escarole, chopped carrot and meatballs. Return to boil, then reduce heat to medium. In a separate pot cook pasta until al dente. Stir frequently to prevent sticking. Add pasta into broth mixture.

As promised, tortilla soup:

Bake corn tortillas sprayed with Pam and salted on a cookie sheet in oven at 400 for a few minutes on each side.

1T olive oil
1Cup chopped onion
1t minced garlic
2T fajita seasoning (in the packages i.e. Schilling et al.)
2 1/4 Cup water
2 cans pinto beans drained and rinsed
2 can diced tomatoes
1 can fat free less sodium chicken broth
2 can of chopped green ortega chilis
3T lime juice
1 1/2 cups reduced fat shredded cheddar cheese

Heat oil in large pot or dutch oven over medium high heat. Add onion and garlic; saute 3 minutes. Add fajita seasoning and cook 1 minute. Stir in water and next 4 ingredients (through green chilis); bring to a boil. Reduce heat, simmer 10 minutes. Remove from heat and stir in juice.

Top each serving with cheese and crumbled tortilla chips. smile
