I need a good soup recipe that is vegetarian friendly, or at least meat free. I told my sister I would make the soup for her "Friends of Trees" neighborhood tree planting day. She was overwhelmed and I will be in town, so, sister to the rescue! Except for the fact that once I looked through my recipes I realized most of my soups contain meat!

Anyone have any good ones to share?

Go to the Soup thread. My escarole and bean soup can be made with veggie stock instead of chicken stock.

Does shrimp count as meat? Super easy favorite is tomato soup, dill, rice and salad shrimp. Thick and filling. Got us through many a no-meat-on-Friday day as a kid.

My corn chowder recipe is back in the other It's Cold Let's cook...thread here in the cooler somewhere. Just leave the bacon out.

Truffle - that does sound good. I think a lot of vegetarians will still eat seafood. I also personally love using dill in recipes. Thank you!

Are you including eggs as a valid ingredient? If it's something you can use, consider an egg flower soup. I'll try to get the recipe tonight.

I also do a veggie chili that's really good. That link's at home (but I think it's better with half the corn; I don't like corn).

I am a vegetarian and would not eat anything with shrimp or any kind of meat broth! Some vegetarians will...but I would make sure before you made a big pot of soup that no one will eat!! smile
I love Potato Corn Chowder...here's how I make it...

2 lbs of potato's peeled and cut into cubes
1 can 16oz. of whole kernel corn
1 can 16oz. of cream style corn
1.5 cups coarsely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
2 tablespoon real butter
2 tablespoon extra virgin olive oil
2 cups heavy cream
3 cups veggie stock (you can buy this like you do chicken stock)
1 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoon chopped chives

Melt the butter with the olive oil in the bottom of your pot over low heat until the butter is melted. Turn up the heat slightly and add the onion, peppers and celery and cook until the onion and peppers are tender (about 4 minutes) Slowly add the cream, stir in, slowly add the veggie stock, stir, add the corn, potato, salt, pepper, and bring to a boil, stir frequently to keep it from sticking! Reduce heat, cover and simmer for about 20 minutes or until the potato's are tender. Stir in the chives. At this point you can add season to taste...I like mine a little on the spicy side so I like to add a little hot sauce! You can always add a little more cream if it is not thick enough or a little broth if it is too thick! Good Luck!

Found it. Again, I would reduce the amount of corn but that's just me. It's a little spicy so adjust accordingly.

Easy:

Broccoli Soup:
Broccoli (Just adjust upward for more people)
Water
Salt

Boil broccoli in heavily salted water for 4 minutes. Strain (reserving liquid the broccoli cooked in) and immediately submerge cooked broccoli in heavily iced water. Stir for a minute or 2. When the broccoli has cooled, buzz it up in a blender with the reserved liquid (less for thicker, more for thinner) and serve with plenty of accessories (which makes a good party/occasion food) such as:

Poached eggs
Goat cheese
GOOD olive oil
Pepper
Cream
Walnuts
Almonds
Croutons

So easy to make and unbelievably tasty.

Buccs, I'd imagine you could also sub cauliflower for broccoli. I like both, but would probably boil in chicken stock. Or veggie stock.
