Since there are no lines for customer signatures on the new GFE does that mean that none are required?

There has never been any regulatory requirement to have the GFE signed.

but there is the acknowlegement of receiving the GFE that requires a signature...

But the acknowledgment is not a requirement of RESPA. It is allowable by RESPA and is strictly at your option.
