Lemon Chicken
6 to 8 boneless, skinless chicken breast halves 1 egg beaten with a little bit of water (1-2 tsp.) 2 tsp. granulated garlic, divided 1 C bread crumbs ½ grated parmesan cheese ½ C (1 stick) butter, melted (or ¼ C butter & ¼ C olive oil) 3 T fresh lemon juice 1 T fresh chopped parsley Salt & pepper to taste
• Add salt & pepper to beaten egg. • In a separate dish, combine bread crumbs, 1 tsp. garlic, parmesan cheese, parsley and salt & pepper. • Add lemon juice and 1 tsp. garlic to melted butter. Pour about 2/3 of the butter mixture into the bottom of a 9 x 13 baking sheet or cake pan; tilt pan to coat the bottom. • Dip each chicken breast into the egg mixture, then into the bread crumb mixture. Place on top of butter mixture on sheet pan. Drizzle remaining butter over chicken. • Bake uncovered for 30 minutes at 375°.
I used Panko bread crumbs and it was excellent—very crispy. I love this recipe and used to make it alot, but my husband doesn't like it as much.

My mom's chrispy chix - dip chicken pieces in melted butter seasoned with paprika and garlic then roll in crushed rice crispy cerreal. Bake at 350 about 35-45 mins for breasts, an hour for bone in pieces. This is the most requested birthday dinner entree in our family. The page containing this recipe is the most tattered in my personal copy of Nataliebear's Nummies (Most tattered = most used)

anyone ever done beercan chicken??? Yep. Couple of tips: 1. Put the can/chicken combo on a pan in your grill. This keeps the chicken steadier and also keeps the dripping juices from causing flame-ups. 2. Plug the neck with a 1/2 onion or lemon to keep the beer steam inside the bird.

LOL! Oh yeah. We usually take the entire top off with a can opener.

4. Make sure a vertical chicken will fit in your grill BEFORE you decide to go ahead with this project. My hubby had to adjust the racks inside his hot grill while I stood there balancing the can/bird/pan combo and avoiding the dogs.

Thanks for the beercan chicken tips. I'm hoping the new Weber will fit a standing chicken, but if not, I'll just cook it in the oven.

If you want to cook the beercan chicken in the oven, put it in a deep roasting pan. I put potatoes, onions, celery, and carrots in the bottom of the roasting pan and let the chicken juice flavor the veggies. Mmmmmmm good.
