This year, we are having a vegetarian couple over for Thanksgiving. I've made vegan Italian sausage, vegan taco "meat" and soyrizo for this couple, and they want to see what I can do for this holiday. Initially, I thought I'd make pumpkin sage ravioli with a balsamic vinegar reduction and baked acorn squash stuffed with wild rice. But this doesn't seem filling enough. If anyone has any experience in making a vegetarian-friendly Thanksgiving, please help with suggestions.

Sorry, never have and never will. They can eat the meat or get out. I feel like that drill sergeant in the Geico commercial, “You mamby pamby vegan, get a life! Eat the meat. Here, you want a tissue?!”

They're actually a pretty cool couple. He's a lawyer at a firm where one of our offices was. She's an exhibitionist who used bagels as a bra after a night of bar hopping.

How Vegetarian are they BaBo? I didn't realize until yesterday that there are different levels - some will eat all cheese - others only vegan cheese and every degree in between. Some Veggies eat honey - others do not.

If you're willing to share, I'd love any of the vegan recipes you have. Our DIL is vegan and Italian (an oxymoron if there ever was one). If I could make her vegan Italian sausage and Taco meat, she would be thrilled.

Good ideas! I'll have to find a gnocchi recipe.

Pooh, they eat dairy and eggs. And I'll post the other recipes from home. Both are actually good.

It's a lot easier when they eat dairy and eggs. My son and DIL have gone Vegan and it's very hard for me to cook for them. I did make a tofu pumpkin pie a couple of years ago with a whole wheat pie crust that was pretty good! I will have to find my recipe again for this year. My nephew ate some and never new it wasn't plain pumpkin pie.

"Vegetarian Thanksgiving" is an oxymoron if I've ever heard one! crazy

That being said, my vegetarian aunt always enjoys making "stuffing pockets" or sandwiches - she makes an excellent stuffing to begin with. What she does then is she adds cut up tofu into the stuffing (only the portion she'll be eating) and then stuffs it into homemade pitas or fresh french baguette and adds a little bit of cranberry sauce. Then she bakes these sandwiches for a few minutes until everything is warm and then serves them. I'm not a vegetarian but I love those things. I guess those are more of an appetizer though...

Regular pumpkin pie would only need minimal changes to make it vegan. Substitute egg replacer for the eggs, and Silk or other milk substitute. You can not tell a difference in milks.

Unbleached flour is easy to find, and you can make crust with oil or vegan margerines. The taste is the same.

So DD - you don't know of which you speak! ::sticks tongue out at DD::

BaBo - you are lucky that they're vegetarian in the broad sense of the word and not the strict sense. Our DIL gets a vegan 'steak' that actually looks very good. They might make turkey also.

Mmmm!!!

The best pumpkin pie is made from scratch. I roast my pumpkin and its seeds every year. I'm not good at the crust, though.

All that type of eating just sounds too complicated. I think it would be easier to just not eat if I had to consider everything that might be "wrong" in a given recipe. I was first thinking...just don't eat the turkey, but it goes alot further than that, I guess, if you can's use eggs or dairy.

I'm sorry, but substitute eggs just sounds scary to me...kinda like artificial sweeteners and one molecule away from plastic-margarine.

Agree...we used to grown sugar pumpkins just for this one purpose.

We grow neck pumpkins for baking.

Babo - how do you roast your pumpkin? I have one I need cook and freeze and I've heard that roasting is much better than cooking.

And crust is easy. I do 1C Crisco; 2C Flour; 1T milk; 1/4C HOT water. Use a pastry cutter and mix until just blended. Roll out on a floured pastry cloth, cut at the edge and flute.

DD - I know you're a brat laugh We just picked 2 bushel of Granny Smith's so apple pie will be in my future, very soon.

I recently made a butternut squash quiche that was quite yummy and filling. I cust the squash in chunks and roasted it in the oven with alittle olive oil and salt; and added it to a pretty basic quiche.

I'm the only one in my family that doesn't eat meat, so I just don't put turkey on my plate. I make a traditional dinner. Sorry, can't be any help.
