I don't think I saw Nutmeg on anyone's list. I keep that on hand too! My spice rack has pretty much everything everyone else has mentioned except for the bacon salt!

We do a new rosemary plant each spring. It has just died back now.
Bacon - I just found out that we have the crocus that give saffron. We've never had problems with them, they just pop up every year and bloom, but they don't multiply much in our area.
Next year I'll have to try drying the stamens.

I've never heard of Bacon Salt or Smoked Sea Salt.
My chocolate mint took over one of my rock gardens..I have tried to kill it, but it is very resilient...LOL! I rip it up by the handfulls and it smells wonderful!

I also like Chipotle and, oh carp Does the oh carp give the food a fishy flavor. Haha...funny...but I did remember...It's Everglades and Everglades Heat, I think.

I'm growing my own saffron, so that would be high on my list. How hard is it to grow saffron? The stuff is so expensive to buy, but so unique! I'll find out this fall. It's a crocus bulb and is dormant in the summer. I was told it does well in the desert and can be container grown. Harvesting is supposed to be simple and you just allow it to dry out. The bulbs should be dug up and separated every three years. The single bulb I bought in November has several leaves sprouting out. This should be an exciting experiment. I think I paid $5 for it, but since it's a bulb it'll pay for itself over and over. If all goes well, in a few years we can have a BOL Bulb Exchange or something. LOL I'm in for a Bulb Exchange! I'm running out of room for my tulips and daffodils!

I've never heard of Bacon Salt or Smoked Sea Salt. There's a stand north of Cincinnati that has a little herb lady in it, and she sells the most wonderful smoked sea salt and pacific pink salts. Both give a really unique flavor to foods. I especially love using the smoked salt in my pork rub.

One of my long time favorites is still Emeril's BAM! I have the recipe and I mix it myself and store it in a pint jar. It's a great blend with a kick that takes the work out of measuring garlic, paprika, etc. for every recipe. Me too!! It's absolutely the best on roasted and BBQ veggies & potatoes!!

I've used Emeril's BAM as well! It's awesome on grilled chicken served over his alfredo sauce.

I make my own rubs..but I NEVER measure! LOL! And RARELY use salt in them. If so, I like kosher or sea.

Looks a little light on the garlic powder, BB. This is the recipe I found in a quick search. I'll double check this one against mine at home. Actually, I don't measure much either but I do to make this blend. It's rarely the only spice I use. I may throw lime pepper on or a flavored sea salt just to add to it. As to measuring, I read the recipe, go 'ah ha! that's the way they do it.' Then put it away and wing it. My measuring spoons rarely come out of the drawer. Pinching spices is why God gave us opposable thumbs, isn't it? Happy, a friend sent me some Tony's and we really like it. That and Slap yo' Mama.

Not really. You just pull a bunch of stuff that smells good together out of the cabinet, then toss in a bit of this and a dash of that until whatever you're cooking tastes the way you want it to.

spices: black pepper white pepper garlic cumin Old Bay (both regular and Blackening) cinnamon nutmeg allspice celery salt salt (yes, I know that's more than 6, but you asked)
and you didn't ask for these, but I'll volunteer them - herbs I can't function without: basil oregano rosemary thyme parsley
and to a lesser degree: cilantro mint fennel marjoram chives sage
Since I grow most of those, keeping a supply on hand isn't a big deal. If you don't grow your own, keeping a fresh supply can get pricey - dried are fine for most basic recipes. I freeze a lot of my fresh green herbs. and I also have a whole cabinet devoted to spices, like Becca.
