Anyone want to share a recipe or two? This thread last year is where I found Ops' wonderful mushroom rice recipe (thanks again for that, I am making it again this year.)

I think we need a ruling on whether we need a new thread, if we should continue the old thread from last year and delete this one, or if the two threads should be combined....

For dessert I am doign apple pie roll-ups. So easy and to die for delicious!

Get a ready-made pie crust and roll it out a tad more on a floured surface. Spead a little softened butter on it and then sprinkle with brown sugar and cinnamon ( I use the korintje cinnamon now, smae as Cinnabon uses). Use a pizza roller to cut the crust into 8 pizza slices. Take one granny apple, peel it and cut into slices. Place a slice or two at the wide end of a crust piece and roll it up. Place on non-stick foil, sprinkle with more sugar/cinn if desired and bake at 400F for 10 minutes, then let cool 10 mionutes.

If you can get it, drizzle Trader Joes seasonal Fleur de Sal caramel sauce over each one and serve.

We don't do traditional Thanksgiving in my family. In fact, I can't remember the last time we actually cooked a turkey on TG. The main course is usually Chateaubriand and Lobster tail. smile

This may sound a bit strange, but it's something that you really need to taste. It's ravioli made with spinach pasta, stuffed with roasted pumpkin, topped with a giant pan seared diver scallop, and miso sauce.

The pastry chef from Le Bec Fin in Philly taught me how to make it, and like I said, as strange as it sounds, it all works amazingly together!

Right now I need a really good oyster stuffing recipe. I haven't had thanksgiving at my house in 4 years and I have never made stuffing before. I'll pull the dinner off just fine but I really need that stuffing recipe. eek

Layered Salad:

1 head shredded cabbage
1 head cauliflower
1 medium onion
1/2 lb crumbled bacon

Dressing:
2 cups mayo
1/3 cup sugar
1/3 cup parmesan cheese

In a large bowl layer shredded cabbage, 1/3 dressing, cauliflower, 1/3 dressing, onion, 1/3 dressing and top with bacon. Best if prepared the night before. Combine before serving.

If I am feeling rushed (or lazy) I will use the packaged coleslaw mix and the Hormel bacon pieces.

Quicko beer/cheese soup-
two jars of micowaivable queso (I like Frito's brand) and a bottle of Guiness
Pour into sauce pan and reduce to desired consistancy (dont get it too thick).
Serve with a good bread (sourdough and french baggetts both work well).
Its fast, yummy, and really good on a rainy day! smile

Anyone have a quick and easy dessert recipe that feeds 40 or so??? My son's preschool is having their Thanksgiving feast tomorrow evening and I don't have a clue what to take!

or if you want to be fancier-yet-kid-friendly:

Dessert Casserole

Ingredients:
brownies
chocolate pudding
whipped cream (or Cool Whip)
chocolate sprinkles

All ingredients should be in an appropriate ration size for the required number of servings.

Buy boxed brownie mix of your choice and bake according to package instructions. When cool, break or cut into bite size pieces and layer 1/2 in bottom of large disposable foil casserole pan and cover with pudding. Layer on remaining brownies, then cover tightly and chill overnight. Top with whipped cream and sprinkles before serving.



ETA: if you don't have time to make enough brownies I'm sure it would be just as good made from store-bought chocolate cake.

Scalloped Oysters

2 cans oysters, with juice
2-3 cups crushed saltine crackers
1 can condensed milk
1 stick butter
salt & pepper to taste
2-3 dashes Tabasco (to taste)
3-4 dashes Worcester Sauce (to taste

Pre-heat oven to 400.In saucepan melt butter and add oyster juice, condensed milk, Tabasco, Worcester sauce, salt & pepper. Heat to just boiling, remove from heat. In square deep casserole pan, place layer of oysters, then layer of crackers, then drizzle with the sauce. Repeat this process ending with a layer of oysters on the top. Bake for 35-45 minutes until heated through and golden brown on top.

As Promised Guiness Beef Stew
Had this first at bar on the coast in Eureka (northern) Ca.
Ingredients
2 tablespoons Extra Virgin Olive Oil
3 pounds top round, cut into 2-inch chunks
4 slices bacon, chopped
2 medium onions, finely chopped
3 carrots, peeled and sliced on a slight angle into pieces about 1/2-inch thick
2 ribs celery, finely chopped
3 parsnips, peeled and sliced on an angle into pieces about 1/2-inch thick
1 large or 2 medium turnips, peeled and cut in half then cut into wedges 1/2-inch thick
1 fresh bay leaf
2 teaspoons cumin
1 teaspoon allspice
2 tablespoons honey
2 tablespoons Worcestershire sauce
1 bottle Guinness beer
6 cups beef stock
1 pound small new potatoes, scrubbed and left whole
3 tablespoons butter
3 tablespoons flour
1 loaf store-bought Irish soda bread
6 cups beef stock
Preparation
Preheat oven to 375ºF.
Place a large pot over medium-high heat with 2 tablespoons EVOO, about 2 turns of the pan. Add the meat to the pot and cook, stirring occasionally, until well-seared on all sides, 7-8 minutes total. Remove the meat from the pot and reserve it on a plate.
Add the bacon to the pot and cook until brown and crispy, 4-5 minutes. Add the onions, carrots, celery, parsnips, turnips, bay leaf, cumin and allspice to the pot, and cook until the veggies begin to get tender, 6-7 minutes.
Add the honey, Worcestershire, Guinness, reserved meat, stock and potatoes to the pot and bring to a bubble. Cover the pot and transfer the stew to the oven. Cook until the meat is tender, about 1 hour.
After an hour has passed, remove the stew from the oven and place it on the stovetop over medium-high heat to bring up to a bubble. Place a small skillet over medium-high heat and melt the butter. Sprinkle the flour over the butter and cook it for about one minute.
Scoop a mugful of the broth from the pot and whisk it into the roux. Transfer the thickened liquid back to the pot of stew and allow it to cook at a bubble for 2-3 minutes, until thickened. Serve up the stew with some beer bread alongside.

You could also put food coloring in with the marshmallow mixture to make it look pretty. I usually use green around Christmas time, form them into little wreaths and then put red hots on there for the "ornaments". smile

Brandied Cranberries

1 and ½ packages whole cranberries
1-3/4 cups sugar
½ cup brandy

Mix until brandy and sugar until sugar is dissolved. Pour into 9X13 pan. Put foil over pan and seal. Bake at 300 for one hour (do not peak). Remove pan from oven and let out steam. Recover and keep covered until cool.

This is sooooo good. But instead of sprinkles, I like to use crushed up Heath Toffee bars.
