Somebody posted a broccoli cheese soup recipe a while back and I can't find it (it's been years I'm sure) but me and my entire family LOVED it and I want to make it again but can't find the recipe at home either.

If you know who you are please post for me, or if you have a good recipe, please post that for me too!

Easy Broccoli-Cheese soup I made this weekend. I did mine stovetop, but it would convert to Crock Pot with no problems, I think. **WARNING** This recipe is NOT diet friendly.

1 large baking potato, diced
3 cloves garlic, crushed
1 medium sweet onion, diced
3 tbsp butter
1 box vegetable stock
1 pkg frozen chopped broccoli
1 lb Velveeta
2 large handfuls shredded sharp cheddar
pinch dried thyme
salt
white pepper

Melt butter, sweat onions and garlic until soft. Add potato, seasonings, and stock. Bring to a boil then reduce to simmer, add broccoli and let cook until potatoes are soft. Remove from heat and puree in pot with immersion blender. Add cheese and stir until melted.

It's delicious! And I do crescant rolls with ham inside of them for the meat eaters in my family to dip.

I have a 10 minute quick recipe that my family loves:

In large pot, saute until tender:
2 tbls butter or margarine
diced onions

then add:
1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
milk

heat, whisk out lumps and add:
4-8 ozs cheese (I use cheddar/monterey jack)
chopped broccoli (about 1 cup usually frozen that I microwave)

Once the cheese melts, its done.

can that be made without the mushroom soup, celery soup, onions and broccoli?

Vegetarian would be more like it. If she were true Vegan she wouldn't eat anything that is an animal by-product which includes cheese or any dairy.
