I need recipes or ideas on what to do with all the summer squash and zucchini that we have. If you plant one plant, it dies. If you plant two, you can feed millions!

Zucchini bread is one good way to get rid of it. We've also sliced zucchini, tomatoes and onions and layer them with cheese, then baked it.
I used to live in a farm town where everyone had a garden. If you left the windows down on your car when you parked it, you'd find someone had thrown a zucchini in your front seat when you came back.

You can shred the zucchini and place in zip lock bags and freeze to use in the winter. Works great to pull out a bag to make bread in the winter time.

The only thing I will eat with zucchini in it is a chocolate cake that a former co-worker used to make. I'll try and track down the recipe.
My mom used to make fried zucchini like you would fried green tomatoes. I never tried it though but everyone else seemed to like it.

You can saute the zucchini/squash in a little butter of EVOO with a bit of salt, pepper and garlic. When almost done, sprinkle on some grated parm and let it brown.
OR
Cook bacon in a large saute pan. Remove bacon when done, and reserve a couple of tablespoons of grease in the pan. Add onion and saute; then chunks of zucchini and saute; then add tomatoes and cook for a bit. (you can also add peppers if you like) When all is heated, take off heat sprinkle with the bacon and top with grated mozzerella, cover and let the cheese melt. It is Yummy!

My soon to be wife has a great recipe for a chocolate zucchini cake, and if you weren't told it was in there, you'd have no idea it wasn't just an especially good chocolate cake. We grill and/or sautee either of these, just a little olive oil and some seasoning. Delicious!

Zucchini boats!! My fvorite way is grilling them. You could cut into chunks and them to spaghetti sauce and freeze some for that purpose as well.

My wife takes Zucchini and shreds like a hash brown, adds some butter to a skillet, mixes zucchini and browns sugar tother then fries it up. She also does the breads. Far as squash, we grill. Dip each side with Olive Oil, then sprinkle garlic seasoning on it and grill till you have those nice lines. Or fry by dredging in flour. and fry in butter or bacon grease. Me I use them for targets, can't stand either one.

The best recipe I have seen for Squash I can not wait to try it. Targets Unfortunately I live in a state that would have issues with it.

We marinade it in Lite Zesty Italian and grill. Or steam with butter, salt and pepper.

Found a recipe last summer that's great - I think it was in Martha Stewart Living. Slice it lengthwise very, very thin (with a mandoline is best). Dress it with lemon juice and olive oil, salt and pepper. Let it sit for about an hour. The lemon juice will "cook" the squash. It'll still be crunchy, but not raw tasting. I mix zucchini and yellow squash. Really good and refreshing - and out of the ordinary.

Zucchini can also be sliced or chunked and used as a replacement for the apples in apple pie - like the cake mentioned above, unless you are told you wouldn't notice any difference.

We marinade it in Lite Zesty Italian and grill. I dont eat squash, but slice it thin length ways and do ^^^. It seems to be a summer bbq fave.

I love to cook squash and zucchini! We have several favorite recipes. Cut them in half lengthwise and scoop out the middle. Fill with cooked hamburger, sausage and rice. Cover in marinara and cheese. Broil.
Slice them up with butter, onion, lemon pepper and cilantro. Wrap in a foil packet and grill.
Mix shredded zucchini with egg, parmesan, oil, dill and pepper and form patties to fry.

Julienne cut the squash, zucchini and some carrots on a mandelin cutter to make a veggie "spaghetti". Saute it in some olive oil for a few minutes then add some diced tomato and/or some marinara sauce.
You can also cut into 1/4" thick "coins" and dip it in olive oil, then dip it in a 50/50 mixture of seasoned bread crumbs/parm. cheese. Place on a baking sheet sprayed with some olive oil on the bottom rack of 450 degree oven. Cook until bottom is brown, then flip and brown the other side.
