I'll go first:
Mac n' Cheese
3 cups pasta (elbow macaroni or shells or whatever)
2 cups milk
2 tbsp butter
1/4 cup flour
1 cup shredded cheddar cheese
8 oz pkg Velveeta
Cook pasta until al dente, drain and set aside.
In saucepan melt butter and slowly incorporate flour, cook approximately 3 minutes but do not let it burn or turn brown. Start adding milk and stir until there are no more clumps of flour & butter. Add Velveeta chunks and shredded cheese, cook until smooth and creamy.
Grease cooking dish. Mix cheese and pasta together, add to pan. Cook at 350 for 10-15 minutes or until hot and bubbly.

Protein Shake Ingredients 2 scoops whey protein powder, vanilla flavor 1 1/4 cup skim milk handful of any kind of berries 1 frozen banana 2 ice cubes
Directions 1. Chuck it all together into the biggest tallest plastic cup I own. 2. Use the immersion blender to squish it all together and whip it into a frenzy. 3. Drink it.

I called it Easy Chicken Bruschetta:
- 1 can diced tomatoes - 1.5 lb chicken breasts/thighs thawed - 1 box Stovetop stuffing (I use Savory Herbs) - Shredded mozzarella
Preheat over 350. Dice chicken.
In a bowl, combine diced tomatoes including the liquid with stuffing mix. Mix well.
Grease 9X13 casserole dish. Add chicken to dish, creating a single layer. Cover chicken layer with tomato/stuffing mixture. Bake for 30-40 minutes. Once Chicken is cooked, top with cheese. Bake for another 5 minutes or until cheese is melted.

This is a cornbread recipe I came up with.... 1 10" cast iron skillet 1 box of jiffy cornbread mix 1/3 cup of milk Two tblspns of honey Three strips of finely diced bacon One finely diced jalepeno One finely diced green chili 1/4 of a finely diced white onion A handful of shredded cheddar
First render the bacon in the skillet till crispy. Add about a quarter of the peppers and onions. Fish them out and put in a mixing bowl and transfer the skillet full of bacon fat to a 420 degree oven while you mix the other stuff all together in the mixing bowl. let the mixture rest for a few minutes then pour it directly in the hot bacon grease. Then bake until it rises and is golden brown with a gorgeous brown crust. Serve with real butter and honey!
