I don't cook on Thanksgiving. I clean, make sure there is enough cold beer, select the wines, and keep the heck out of the kitchen, unless I'm requested to do some dishes.
However, my wife will make turkey with her traditional stuffing, mashed potatoes, sweet potatoes, a couple pies, a couple vegetable casseroles, and whatever else pops into her head. Everything is very traditional, because that's the way we like it. No experimenting on Thanksgiving.
We're having a really small group this year. The family is fragmenting as nieces and nephews get married and have kids and start their own traditions. My daughter can't come home. We may just have 6 or 7 total this year. It used to be 24 to 28.

I am the official maker of all things gravy. But I may also be smoking a bird since mom is not really able to do the bird anymore and little sister is capabale but a bit slow in the kitchen. She is still the bomb on making corbbread dressing though.

no idea. Dad's Thanksgiving involves driving 10 hours to my grandmothers house in northern Michigan, and they'll be lucky if I make it, let alone cook. Mom's thanksgiving involves Cracker Barrel. I used to make the turkey and stuffing, mom made everything else. One year her oven was broke, so we went to Cracker Barrel instead - And realized how much better it was not to have to cook or clean! been doing that for about 4 years now. The IC's family is HUGE and they have a potluck. So lots of choices. I make/buy dessert.

Ops' Mushroom Rice:
Mushroom Rice 1 stick melted butter (can use less, but that's what my recipe calls for) 1 cup Uncle Ben's converted rice (Uncle Ben's works best) 1 can beef broth 1 can french onion soup 1 can of mushrooms
Mix up in a 9x13 casserole dish, cover with foil, and baked at 350 for an hour.
If ya double it, allow for plenty of extra time & be careful when you take it from the oven.. the dish will be quite full.
HIGHLY RECOMMEND!

Don't they call it Uncle Ben's Converted Rice? I seem to remember that from their commercials back in the day.

Converted rice is actually brown rice that has been treated to give the appearance of white rice. It's less starchy and more nutritious. It holds up to the cooking time of this recipe better.
Sunny, I think you could use fresh mushrooms easily. I might saute them with a little butter first, maybe some diced onion, just to get a little extra moisture into them.
