Not sure I understand why you need a letter. Wouldn't you just remove them from your list of providers? If it's a business courtesy, then only you would know why you're doing it and how to word it.
I would vet any letter you plan on sending through your legal counsel. Giving them reasons is probably not a great idea, unless you just want to just say that you no longer require their services.
