I thought there was a thread on this, but can't find it. We are having a potluck here Friday so I am looking for ideas for some good recipes.

Chicken Lip Dip is always good. Not sure if "chicken lip" is a common name but that is what we call them here. Chicken lips are just chicken with some hot sauce.

Bacon-wrapped water chestnuts are a simple and tasty treat.

Soak about 75-100 wooden toothpicks in water. Line two sheet pans with foil and fit with a rack.

Drain and rinse two medium sized cans of whole peeled water chestnuts (Not the commercial cans, not the puny ones). Let drain for 15 minutes. Place water chestnuts in a large bowl and pour soy sauce over them. You don't have to submerge the water chestnuts. Stir thoroughly once every 10 minutes for 30 minutes. Meanwhile cut 1.5# thick-cut bacon into thirds. Preheat oven to 375. Wrap each water chestnut with a piece of bacon and secure with a toothpick. Continue until you run out of bacon. Arrange on racks and back for 30-45 minutes until browned all around.

You can serve as-is or make a dipping sauce of honey and chipotle powder. I can take the heat, so I add a fair amount of powder.

I'm sure you can keep these warm in a crock pot but I've never had them last long enough to actually get cold.

Soups or pulled pork, or any crock-pot dish works pretty well if you have that option.

The tortilla wraps with stuff inside are good.

Hummus and pita chips or veggies.

Or go all charcuterie on that place! Some cheese and fancy meats are always good options, maybe some olives thrown in there if you want to class it up and/or you like the people you're feeding.

This is a huge favorite here:

Bean Salsa or Cowboy Caviar

Ingredients:
1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
1/2 medium onion chopped
1/4 green bell pepper
1/2 cup chopped pickled jalapeno peppers (I use fresh chopped jalapenos)
1/2 teaspoon garlic powder
1 cup Italian salad dressing
3/4 cup chopped cilantro
dash of cumin
dash of chili pepper

Directions:
1. Mix beans, peas, tomatoes, corn, onion, bell pepper, and jalapeno peppers in a large bowl. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve. Serve with Tortilla Chips

Everyone here makes it different. I add avocados and cucs. One usually leaves out the corn. I just add everything and add extra dressing. I always use lite dressing too.

I've made the above several times, always well received. My version takes out the onions and peppers and adds in chunks of avocado instead though.

Buffalo chicken dip

2 or 3 chicken breast
12 oz bottle Ranch dressing
6 oz shredded cheese
8oz cream cheese
hot sauce to taste

boil chicken then put aside
melt cream cheese and ranch dressing. (careful it hurts when it spits at you)
shred chicken with 2 forks in bakeware
pour hot sauce (I use approx 10 oz bottle very hot)
pour cream cheese mixture on top
bake 350 degrees 30 minutes
pour cheese and bake add'l 10 minutes.

Viola!! Bring chips and dig in. It has always been a huge hit, and very simple to make.

My sister makes that Buffalo Chicken dip, that is good stuff.
My wife makes the cowboy caviar (I don't like it) but it is always a big hit.

While I love deviled eggs, eating one or two and expecting me to sit "quietly" at my desk is just not going to happen whistle

My husband and I only eat whatever I bring to potlucks. I've seen too many animal hairs, egg shells, etc in what others have brought. My mind always thinks that maybe their cat helped them make it!
