A check for $200,000 is deposited. We want to give the customer $10,000. How would the hold be placed? Would we still have to hold $4800 for 2 days using the large $$ hold? Since we are making more than $4800 available do we just hold the $190,000 for 7 days and no 2 day hold?

Reg CC sets the minimum requirements for funds availability. You can always make funds available sooner. Since you are not invoking a case-by-case hold, simply use a large item exception holding $190,000 for 7 business days.
