I usually mix melted butter with a some Chicken and Applewood BBQ rub. apply to turkey and put remain mix in turkey cavity. put aluminum foil around turkey and put on smoker. Baste with juices in aluminum foil every 30 minutes. Cover when almost done.

I hadn't thought about putting the bird in the smoker. How long does it take?

Each year the BSA sell smoked turkeys. I've never been able to order early enough to get one, though.

We've got some red oak and pecan wood in the shed that we've been saving to smoke venison with, but I'm thinking it would work just fine for turkey. smile

I have a large smoker, but it takes depending on size of turkey 4 to 5 hours. I usually start about 9 am and take it off between 1 and 1:30. I let it rest for 30 minutes, as we eat about 2 pm, when we get the rest of the family here.

The smoked turkeys I have received destroy the skin. I would go with deep fried.

Seriously. We always fry them (for the last several years, anyway). It's so fast and they turn out so yummy, I hadn't even considered smoking one.

Get a small bird and smoke it this year...fry another one just in case! Eat the fried one at lunch and the smoked one will make the best sammiches evah!

You have to cover the bird the last 45 minutes to an hour and make sure coals are not too hot. If the skin gets too dry baste more often.

There are too many fires down here in redneckville so I've never had fried turkey either. It sounds delicious, but I've got mine turkey cooking skills down and don't want to change it. wink

Looking for my sanity
Traditional roasted. But it's the stuffing that makes it. Even through this isn't a stuffing discussion, ours is awesome: Jimmy Dean sage sausage, pine nuts, spinich, mushrooms, water chestnuts plus the traditional onion, celery, etc, sauteed in butter with herbs all mixed with the breadcrumbs. The best.

A few years ago we rubbed up the turkey so it was all bronze looking, stuck a pair of sunglasses on him and called him Pauly D.

Every year the turkey must do a dance.



Not sure about this year though, there will only be a turkey breast. frown Can't have much fun with that.
