I am going to try something new this year. I have a wedding the day my little family is getting together. (Who in their right mind would set a wedding anywhere close to Thanksgiving!) Since the wedding is at 2:00. I am going to try Trisha Yearwood's way of cooking a turkey. After rubbing it down with the butter, seasonsing and stuffing with an onion, carrot and celery, will put in covered roaster with 2 cups of water or maybe broth. Bake at 500 degrees for an hour and then turn the oven off. Leave in oven and do not open for 4-6 hours when the oven is cold. Others I know have done their turkey this way and say it is so tender and juicy. So we will eat in the evening and as soon as the wedding is over I will come home and fix my mom's traditional bread dressing, mashed potatos, sweet potato casserole, green bean casserole and have those baking while carving the turkey. Although they say it's so tender that it just falls off the bone! Will have hot rolls and pumpkin pie for my son and cherry pie for my daughter. And of course the olive and pickles. None of us like cranberries so forgoing any salads. We just load up on all the other stuff.

Then I have a recipe for a casserole I will use up a lot of the turkey and it has pepperidge farm seasoned stuffing mix and is like turkey and dressing all mixed together. Yum!

Could you please share the casserole recipe? My husband just bought a smoker so we are smoking (practicing) a 14 pounder this weekend to enjoy with our hunters. That recipe might be great for the leftovers.

I also like sammiches of turkey, dressing, gravy, cranberry relish - all wrapped up and baked in the oven. Yummo!

I'd like that bake in the oven sammich recipe too please, Okie.

I must make pot pies with the leftovers one night but those sammiches sound good for Friday afternoon. Pot pies are really so very easy with the ready pie crusts you buy in the refrigerator section. Just mix chopped up left-over turkey, a bag of mixed frozen veggies and the left over gravy and pour it into a pastry lined pie pan. Top with the other crust from the two pack box and pop in the oven at 350 till crust is browned. If you're lucky enough to get the gravy pack inside your turkey, you should have plenty of gravy for the pot pies too.

Here ya go.......

Chicken & Dressing Casserole

4 large chicken breasts or 2 ½ - 3 lb. broiler chicken
1 can cream of mushroom soup
1 can cream of chicken soup
8 oz. Pepperidge Farm Herb-Seasoned Stuffing mix
1 stick butter, melted

Cook chicken. (I just used boneless chicken breasts and added bouillon for extra seasoning
In the broth.) Remove chicken, shred and set aside. Strain broth reserving 2 2/3 cup. Mix
butter and stuffing mix and set aside ¼ cup for topping. Layer half the stuffing in an ungreased
9 x 13 pan. Top with half the chicken. Mix cream of chicken soup with half the broth and pour over
chicken and stuffing. Layer other half of stuffing and top with remainder of chicken. Mix cream of
mushroom soup with other half of broth and pour over top. Sprinkle with reserved stuffing.

Refrigerate overnight. Remove from refrigerator 15 minutes before baking. Bake uncovered
at 350 for 30 to 45 minutes.

And one more new family tradition:

Stuffy Sandwich

Ingredients:
4 hoagie rolls, split lengthwise
1 cup leftover roast turkey meat,shredded
1 cup prepared stuffing
1/2 cup leftover turkey gravy
1/2 cup cranberry sauce/relish

Directions:
1. Preheat an oven to 350 degrees F
2. Layer 1/4 cup turkey, 1/4 cup stuffing, 2 tablespoons gravy, and 2 tablespoons cranberry sauce on each of the four hoagie halves. Top each sandwich with the remaining 4 pieces of bread. Wrap each sandwich in aluminum foil and place in the oven for 15 minutes or until the sandwiches are heated through.

The original recipe from www.allrecipes.com called for mayo on the top & bottom bun but we never used it. One user said they mixed the cranberry sauce with mayo and spread that on their bread.

We do something like this, but with the turkey and no mushroom (fungus) crud. Use two cans cream o chicken

I am thinking this year I might try to make a "Turkey Lasagna' or "Sheaphards Pie" with the left overs.

Layers of Turkey, Gravy, Stuffing, Noodles, then gravy, maybe throw some corn, green beans in there.
top with Mashed taters, bake and then cover with more gravy.

I figure I will use some leftover turkey and make these. Can divide into 8 inch pans and pull out of freezer as needed. It's pretty yummy!

I roasted a couple of ducks yesterday and 6 dungeness crabs. I don't think I've made turkey for Thanksgiving in over 10 years.

Crab is part of our tradition, too. Yesterday morning was spent shelling four huge dungeness crabs for crab dip. The only reason it wasn't the main event was because I wasn't hosting this year. Tonight: crab cakes!
