Saint Patrick's Day

In the United States and Canada, consumption of corned beef is often associated with Saint Patrick's Day.[10] Corned beef is not considered an Irish national dish, and the connection with Saint Patrick's Day specifically originates as part of Irish-American culture, and is often part of their celebrations in North America.[11]

Corned beef was used as a substitute for bacon by Irish-American immigrants in the late 19th century.[12] Corned beef and cabbage is the Irish-American variant of the genuinely Irish dish of bacon and cabbage. A similar dish is the New England boiled dinner, consisting of corned beef, cabbage, and root vegetables such as carrots, turnips, and potatoes, which is popular in New England and parts of Atlantic Canada

I'm way ahead of you... I did an Irish Car Bomb and drank a Guinness or 3 on Saturday afternoon after I took a boat ride on the Chicago River (dyed green!) - cool architectural tour with heavy focus on the Irish architects and Irish folklore and haunted locations. Very cool day.

I'm making Corned Beef and Cabbage tonight for dinner. Yummo.

My grandmother (born in Ireland) boiled everything she made. My dad always says Irish food is very holy food, cuz ya boil the He*( out of it! laugh laugh laugh laugh
