Like I said, I leave the turkey frying to the beer drinking men in the garage and go make the pies. I think there's a way to cook a turkey in the oven, but when we've got the men doing the turkey cooking, we take what we can get.

Coat with olive oil, salt & pepper & poultry seasoning (or, sometimes in our house, Cajun seasoning.) Dump upside down in a roasting pan. Cook at a relatively low temperature for a long time. Periodically open the oven and baste the thing with the juices it is excreting. Take out and let it rest for at least 30 minutes.

QCL by upside down do you mean the open end down?

For roasting a turkey, I stuff the cavity with apples, rosemary and an onion. Sprinkle salt and pepper inside and on the outside skin. I cover with a foil tent to roast. Then when I remove the foil to brown the skin, I baste with a mixture of melted butter and melted apple jelly in about equal proportions. Gives the skin a crispy sweetness.

Ok. Makes sense so you can use the legs to assist lowering and raising the bird. I assume getting the hot oil in the cavity helps it cook more evenly also.
It's settled. I'm frying my Christmas turkey.

The only way I've successfully cooked one in the oven (read: not burned) is by placing the bird, breast down, in an oven bag. Removed all of the icky things that had been shoved back inside the cavity first, though, and inserted things like celery and onion instead. Salt, pepper and oil on the skin doesn't hurt either.

Actually, I have a really good one that uses curry, cinnamon and some other fun spices and makes for a very tasy (i.e. not bland and boring) bird. Also it turns the bird into a beautiful golden color.

We bought a great jar of turkey Brine at the grocery store last year and soaked the turkey in that and smoked it, but you could cook it in the oven too. I'm the person that has to get the turkey with the pop up. Then I stare at the oven window all day and then have to open the door to be sure that the oven window isn't keeping pop-up secrets from me. But my turkeys always come out wonderful. The brine I used from Homeland or Albertsons was "Spice Hunter" but Williams Sonoma has one too. Brined turkey is the way to go. We brine in an ice chest with lots of ice and leave it overnite in the garage. Hope that helps.

Peepers, regardless of the method used to cook said turkey, i offer this tidbit of wisdom gleaned from many sources - Dad, Grandpa, uncles, brothers...

Whoever carves the turkey gets to sample as much as they choose when carving.
