Squab doesn't sound good to me just cuz of the name..."squab"......just sounds like a bird that wants to be a chicken, but can't quite cut it.

Ok, I think I have a gameplan.
I did some research on an electric roaster oven. I see a 22 quart one at a local store that's reasonably priced. This should hold up to a 22 pound turkey.
I'm going to get that after work.
I also looked up some cooking options and I think I should be set. I just need a practice run.
Thinking about this further, I could have saved us all a lot of time by doing this earlier and not starting this thread.
Well if I learned one thing today, it's that RHJ and Boaty have been virtually no help at all.

My mom makes a delicious turkey! It's stuffed with cornbread and pecan stuffing. She makes sage butter and squishes it under the skin. Then when you cook it, baste every 30 minutes with maple syrup. For the last hour or so, she drapes bacon over the whole bird. It's so good! The gravy she makes from the drippings has that maple flavor to it and is really good.

I may have changed my mind a bit and I may go with the covered roaster you put in the oven. It's an even cheaper option than the electric one and may do just as fine a job.
Anything with bacon (not so much BaconBoy based on his lack of helpful posts) must be good.

I brined a turkey one year, then made a bacon weave blanket to cover the breast. Wrapped the wings and legs in more bacon then tented and baked for a few hours. Last hour uncovered. That was the year we drank the bacon-y gravy, it was so good. I'd provide more detail about the brine mixture I made and the cooking temps, but I don't want to give the false impression I'm of any use to contributing to this thread.

Here's a dry-brined recipe that sounds really good. It has a dressing recipe (which is calls "stuffing", sheesh!) that also sounds good.

not only have I never cooked a turkey, I've never bought a turkey
so last night I picked up about a nine pound turkey to test my cooking skills
I also noticed they sell frozen turkey breasts as well
that is amazing! it's the best part of the turkey! I may get one of those for the big day so there is plenty of breast meat to go around
I'm hungry now
