My wife & I are looking for SUPER easy kid-friendly recipes. It seems like we get in a rut this time of year making the same stuff.

We want super easy recipes of things you normally keep on stock so you don't have to go buy a ton of stuff. When my wife works, she gets home about 1/2 hour before me and tries to get dinner started but depending on the day our daughter can be fairly clingy.

I will share one that we have tried that is easy and our daughter loves it:

Chicken Casserole:
3-4 chicken breasts--cooked and shredded
1 can cream of chicken soup
1 can cream of mushroom (or another cream of chicken)
1 can chicken noodle soup
5-7 pieces of toast

Shred chicken, cut up toast and mix with soup. Put in 9x13 pan at 350 for about 20-25 mins.

here is a simple, yet kid approved, recipe:

1. Go to McDonald's
2. pull up in the drive thru and order
3. drive to the window to pay
4. pull up to the next window to get food
5. throw it in the backseat for the kid to eat

I'm making this recipe (for the first time) next week for our office potluck. It's from Food Network:

2 large heads cauliflower
1 clove garlic, halved
1/4 cup olive oil
4 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
1/2 cup fresh parsley leaves, roughly chopped
1/4 cup grated Parmesan
Lemon wedges, for serving


Directions

Position an oven rack in the bottom of the oven and preheat to 450 degrees F. Line a baking sheet with foil.

Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat on the prepared baking sheet. Rub the outside of each head with cut garlic.

Whisk together the oil, 3 tablespoons mustard, 1/2 teaspoon salt and a few grinds of black pepper in a small bowl.

Put the cauliflower on the prepared baking sheet and brush the entire outside and inside with the mustard-oil mixture. Roast the cauliflower until nicely charred and tender (a long skewer inserted in the center of the cauliflower should pass through easily), 50 minutes to 1 hour. Let rest for a few minutes.

Meanwhile, combine the parsley and parmesan in a small bowl. Brush the roasted cauliflower heads all over the outside with the remaining 1 tablespoon mustard and generously sprinkle with the parmesan-herb mixture.

Cut the cauliflower into thick wedges and serve on plates with a sprinkle of salt, lemon wedges and any extra parmesan-herb mixture.

My go to when I want to THRILL the kid - and keep it easy because it is so versatile.

Make rice - any kind you like - works with minute rice as well as with long grain. I usually do a long grain made with stock instead but this part is just the base so whatever you and the kiddos like works.

Brown 1-2 pounds of hamburger with seasoned salt (to taste) and garlic (teaspoon) (Amount is depending on how much you eat, and/or if you make any side dishes. My family of 3 uses about 1.5 pounds) then add a can cream of mushroom (or celery or whatever kind you like/have, if you do more meat you may need 2 cans, just make it creamy)to the meat.

Put rice on the plate, cover with meat mixture. My son calls it soupy meat and rice - at 13 he still loves it. I usually add some soy sauce to my plate, but not the boys.

My family always loved this. Feel free to completely cover with as much cheese as you want.

Dorito Pie
1 small (7-10 oz) bag of Doritos
1 lb. ground beef, browned
1 small onion, chopped
1 small can chopped green chilies
1 can Cream of Mushroom soup
1 can Milnot
Grated Cheese

Mix together soup and Milnot and set aside. In a large casserole dish layer half the Doritos, half the browned, ground beef, half the onion and half the can of chopped green chilies. Pour half the soup mixture over layers. Repeat all layers. Top with lots of grated cheese - Cheddar or Velveeta. Cover. Bake at 350 for 20 minutes until heated through. I always put the casserole cover on so as not to burn the cheese.)

One of my very favorites...skillet stew. My mom found it in some magazine probably 40 years ago. These days I try to find use organic ingredients not in a can, but the idea is the same:

Skillet Stew
1 pound ground beef
1 can stewed tomatoes
1 cup rice
1 cup water
1 can black olives (optional)

Brown the beef, then throw everything else (except olives) into the skillet. Cover and simmer for 30-60 minutes (until rice is cooked). Add more water if necessary (it's not soup, but don't let the rice dry out). Add olives at the end just long enough to heat up.

The variations are endless...use mexican or italian style stewed tomatoes, use ground sausage instead of or in addition to the beef, add peppers, fresh veggies, etc...

Home made Pizza Rolls.....

Large Tortillas
Sliced Ham (like you'd have for sandwich meat)
Pepperoni
Provolone and/or shredded mozzarella cheese
Green pepper
Onion
Spaghetti sauce (any flavor)

Heat oven to 350. Layer tortilla with provolone, ham, pepperoni, sliced green pepper and onion, mozzarella cheese, then cover with spaghetti sauce. Fold tortilla and bake for about 13-15 mins. Just long enough to get good, hot, and gooey cheese.

It is a bit messy but super easy and very good...also easily customizable....just add whatever else you like (or take away what you don't like) before you fold the tortilla together.

Great thread. I'm looking for ideas as well. I have like zero time to make dinner and I've exhausted my ideas! Here are a few things I do.

My daughter (9) loves chili-mac, it's kind of lame, but she loves it and it's super easy. I start with the basic easy recipe from my trusty Better Homes & Gardens Cookbook, but I omit: tomato sauce & diced tomatoes and replace it with crushed tomatoes and increase the water a little, and omit the chili's.

1 pound ground beef
3/4 cup chopped onions (1-1/2 medium)
1 15 1/2 ounce can red kidney beans, rinsed and drained
1 8 ounce can tomato sauce
1 7 1/2 ounce can tomatoes, cut up
1/2 cup elbow macaroni
1/4 cup water
1 4 ounce can diced green chili peppers, drained
2 teaspoons chili powder
1/2 teaspoon garlic salt
1/2 cup shredded Monterey Jack or cheddar cheese

In a large skillet cook meat and onions until meat is brown and onions are tender. Drain off fat.

Stir in beans, tomato sauce, undrained tomatoes, uncooked macaroni, water, chili peppers, chili powder, and garlic salt. Bring to boiling. Reduce heat. Simmer, covered, about 20 minutes or till macaroni is tender, stirring often. Sprinkle with cheese. Cover and heat about 2 minutes more or till cheese is melted.


I also try to keep all of these in the freezer in quart ziplocks for quick meal ingredients:

homemade spaghetti sauce
cooked rice (any kind, mexican, white, etc. cook it, let it cool, put in ziplock, press out the air, when you want to reheat - 3 minutes in the microwave, comes out perfect)
shredded cooked chicken
shredded cheese
frozen crushed tomatoes (leftover from other recipes)
frozen chicken broth (usually left over from other recipes as well)

I just started making a bunch of breakfast burritos (eggs, potato, bacon & cheese), wrap them in plastic wrap & freeze. Pull them out and microwave for breakfast (or dinner). First time I did it I was surprised they came out great from the freezer.

Here's another recipe I'm trying out for Thanksgiving:

Slow-Cooker Sausage Stuffing

8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch pieces plus more for greasing the slow cooker
1 large crusty loaf of French bread or two baguettes (not sourdough), cut into 1-inch pieces and staled overnight (about 14 cups)
1 large onion, cut into 1/4-inch pieces (about 2 cups)
2 medium carrots, cut into 1/3-inch pieces (about 1 heaping cup)
2 stalks celery, cut into 1/3-inch pieces (about 1 cup)
1 1/2 teaspoons finely-minced fresh thyme leaves
Kosher salt and freshly ground black pepper
1 cup low-sodium chicken broth
1 pound sweet Italian sausage, casings removed
2 tablespoons roughly-chopped fresh flat-leaf parsley


Directions

Lightly grease the bottom and sides of a 6-quart slow cooker with butter.

Toss the stale French bread, butter, onions, carrots, celery, thyme and 1 teaspoon each salt and pepper in the slow cooker. Pour the chicken broth over the bread mixture and toss to coat. Use your hands to tear teaspoon-size pieces of the Italian sausage and put them directly on top of the bread mixture. The sausage should cover most of the stuffing.

Cover the slow cooker and cook on low until the sausage is cooked through and the vegetables are tender, about 4 hours. Remove the lid and gently stir the sausage into the stuffing. Season to taste with additional salt and pepper. Transfer to a shallow serving dish and garnish with the chopped parsley. Serve hot.

Here is another we made this past weekend:

Mini Chicken Pot Pies
1 tube of biscuits
1 cup cooked chicken
1 can cream of chicken soup
2 cup of thawed mixed veggies

Mix chicken, soup, and veggies in bowl ( I also add some veleeta).

Roll out buscuits into about 5 in circle and press into greased muffin tin. Press firmly against bottom and sides. Put soup mixture into the tin and fold over the top.

Bake 350 for 20-25 mins or until biscuits are golden brown on top.

This recipe sounds delicious.

An alternative Chili-Mac recipe that is super-duper easy and quick. My son (5) loves this.....There are literally 3 ingredients....

1 lb ground hamburger meat (or turkey)
1 Box macaroni and cheese.
1 can sloppy joe sauce.

Brown and drain meat, add sloppy joe sauce. Cook macaroni according to box directions. Then mix the mac and cheese together with the sloppy joe sauce. Mashed potatoes and peas work as pretty good sides.......Very simple and easy, but I promise its good. Though it probably isn't near as good as your recipe, NeverEnds! grin

Our kids will request Tator Tot Casserole when we haven't made it for awhile. Brown hamburger (2 pounds "ish) with some chopped onion. Put the meat and onion recipe in a casserole dish. Top with two small cans cream of mushroom soup. Put a layer of cheese and tator tots on top and bake for 25 to 30 mins on 350.

Now, my husband and I have a difference of opinion on the casserole...he likes cheese on top of the tots. As for the tots themselves, I like perfectly formed rows, like a group of well trained soldiers that know how to walk in straight lines. He has no problem with throwing them on top all catawompuss. It all tastes the same but we each make it a little different. I figure, if he's offered to cook, I'll keep my mouth shut!! laugh
