I wanted to see if we could "capture" some your Christmas Recipe.

I might have posted this before, but this is something my family requires at our family gatherings with all the brothers and nieces/nephews. It really is an awesome recipe even if the ingredients look different:

Pasta Salad

All chopped into bite-sized pieces:

2 cucumbers
2 bell peppers (orange and/or yellow and/or green).
1 large red onion
2 large tomatoes

In separate bowl combine:

3/4 cup extra virgin olive oil
2 cups white vinegar
3 tsp plain yellow mustard
1 tsp Salt
1 tsp black pepper
3 tsp dried parsley
1 1/4 tsp garlic powder
1.5 cups sugar (or Splenda)

Cook pasta until al dente and rinse with cool water stop the pasta from still "cooking" in its heat. Throw everything together in a large bowl. Best if made night before.

I like to use pastas and peppers that look good with the season (i.e. Green and red at Christmas and yellow and orange at Thanksgiving).

And curiously...and for one, I would never use Splenda anyway...but wouldn't the ratio's be different?

The salad is excellent and the ratio isn't different. Perhaps it is the type of splenda I used to use? I haven't used it in quite a while.

Sweet Potato Casserole

Ingredients

3 cups sweet potatoes (about 4 large)
½ cup sugar
½ cup butter or margarine
3 beaten eggs
1 teaspoon vanilla
½ cup milk

Topping:
1/3 cup melted butter
1 cup brown sugar
½ cup flour
1 cup chopped pecans

Boil and mash potatoes.
Mix in sugar, butter, eggs, vanilla and milk.
Put mixture into 13x9 inch baking dish.

Topping:

Melt butter and mix in remaining ingredients.
Sprinkle on top of potato mixture (best to do by hand to ensure coverage).
Bake 25 minutes at 350 degrees.

This serves 10-12, we normally double it and there has not been any left over that I can recall...

My SIL makes this ^^ but she double or triples the topping so it's basically pralines tainted a small amount of sweet potatoes.

Land of the Green & Gold

MEATBALLS
1 jar chili sauce
8 oz sauerkraut (do NOT drain)
1 can whole cranberrie sauce
1 pk lipton onion dry soup mix
¾ cup water
1 cup brown sugar
2 lb bag plain meatballs (about 78-80)
Mix everything together except meatballs in large bowl
Add meatballs & stir
Bake for 2 hrs @ 350
Put into crock pot on low & serve
DELISH!!

The original recipe called for an 8 oz bag but the recipe I posted has been adjusted for a 16 oz bag. The pasta is my favorite part. It looks so pretty and festive with the cucs and tomatoes and red/green peppers.

Ingredients

2 tablespoons paprika
1 tablespoon onion salt
1 teaspoon celery salt
1 teaspoon rubbed sage
1 teaspoon garlic powder
1 teaspoon ground allspice
1 teaspoon ground oregano
1 teaspoon chili powder
1 teaspoon black pepper
1 teaspoon basil leaves, crushed
1 teaspoon marjoram leaves, crushed finely

Directions
Combine all ingredients as listed in a small jar with a tight fitting lid (baby food jars work good). Shake mixture to combine. Stores for months. Keep out of direct sunlight, heat and humidity.
(makes about 1/3 cup)
To Use:
Mix together 4 teaspoons mixture, 1 cup flour, 2 Tbls. packed light brown sugar and 1 teaspoons salt. Place in a doubled plastic food bag and add chicken to coat. Fry, drain on paper towels, serve!
