1 1/2 c butter, softened 3 c sugar 2 tsp vanilla 5 eggs 2 1/2 c AP flour 1 1/4 c unsweetened cocoa powder 2 tsp baking powder 1 tsp salt 1 1/2 c buttermilk 1/4 c strong coffee or instant espresso
Stir the dry ingredients together and set aside. Beat butter & sugar until fluffy, stir in eggs and vanilla. Add dry mixture in small amounts, alternating with buttermilk and coffee. Pour into greased and floured pan and bake at 325 for about 60-80 minutes, depending on pan size and shape.

Christmas Eve with my dad's family is finger foods and sandwiches. I'm making "monkey bread" with the frozen rolls for Christmas morning with my kiddos and hubby. Then we'll do brunch around 1:00 at my mom and dad's. Since I got married last year and we have to share the holiday with my girls's mom, we've had to make some adjustments. We used to go to my parents around 10:00 for brunch, but that's when we get the girls, so we'll do our thing at my house first then go to my parent's. Mom was thinking that she'd make a turkey dinner but we all complained and said that she has to make her Christmas breakfast casserole or it's just not Christmas! My brother also told her that she needed to make her bacon wrapped water chestnuts. So, we're having a very late brunch this year!

For Christmas Eve it will be prime rib, crab legs, cheesy hashbrowns and salad. Christmas Day probably cinnamon rolls and egg bake brunch and then Oyster Stew (and maybe lefse) for dinner.

I just found out the in-laws are coming to spend Christmas night with us on their way to the beach. I think by that point we'll all be tired of typical holiday food so I'm planning to make shrimp tacos for dinner Thursday and still haven't decided about breakfast on Friday.

Guy in front of my says this stuff is second only to his grandma's. Okay, I have a sheet of lefse....

For lefse we just spread butter and sprinkle sugar over that and then roll it up and eat it! We usually make our own but had no time this year.

never mind:
Lefse is a traditional soft, Norwegian flatbread. Traditional lefse is made with leftover potatoes and flour. Some current variations of lefse is made out of flour, and milk or cream, and cooked on a griddle.

The site is just Q&A's about lefse making and a couple of questions about how to eat lefse. Some people use just butter, others butter and sugar (white or brown), some jam and some use them for breakfast burrito wraps. I've heard that some hardcore Scandinavians will wrap it around their lutefisk. We don't do that. haha

I am laughing out loud now...I thought the same thing...it's flat! My pancakes are puffy. This whole folded up thing would be flatter than one pancake.

Lefse is made with potatoes, flour, butter and cream. We use fresh potatoes (boiled and riced). If done right, it should melt in your mouth.

....some hardcore Scandinavians..... When we first had the kids, I asked the hubs about any traditions he wanted to bring to the mix. He mentioned adorning our daughter with lit candles!
