We simply placed in our employee handbook the following:

"While our institution allows its members to conceal carry only in our buildings, employees are expected to leave their weapons securely locked in their personal vehicles during their work shift. Any violation of this policy, concerning a concealed or openly carried weapon, by an employee while on campus during their working shift is cause for immediate termination."

There is a lengthy, surprisingly civil, thread on this topic in the private Security forum. I would suggest that if you prohibit customers from carrying guns that you prohibit employees as well.
