hhhmmm, I wonder if I could can cowboy caviar? Makes a great dinner to put it on big salads and add chopped chicken and cheese and serve with quesadillas or corn chips.

I am still afraid of the pressure cooker so no canning for me. Still can't part with mom's giant canning pot though. NO WAY, that was Mom's. Maybe someday. She used to can meatballs and beef roast and mail it to me cross country, I ate every bit.

If I can't feeze it, it doesn't happen...so I freeze blueberries, tomatoes, sometimes freezer pickles, peppers, onions, herbs [ones that I don't dry, which is rare]

I converted my big standup freezer to a storage cabinet, so I don't even freeze much of the above...mostly the blueberries smile

My mother used to freeze, but she never canned. I'm pretty sure she was afraid of the pressure cooker, too. She would freeze beans, corn, strawberries, etc.

We have a huge garden, I can beans, tomatoes, banana peppers, pickles, potatoes, tomato sauce, tomato paste and I make/can my own salsa which I might add is amazing! I don't can sweet corn only freeze it canning ruins the flavor makes it taste like canned corn you buy at the store not sweet corn anymore I know weird!!!

I have a herb garden I dehydrate and freeze my herbs depending on what they are. I love this time of year!

A friend gave me a box of apricots last year. I canned most in a light syrup and the rest I made into Apricot Jalapeno Jam and it turn out to be the hit of the year. I serve it over cream cheese with crackers. Made great gifts in a basket with a pretty towel and or with a pretty appetizer dish and one of those dip knife serving thingies. Oh, appetizer or cheese spreader maybe?

I will teach my neighbor about canning this year. Annually, my husband and I picked strawberries, blueberries, red and black raspberries and then froze them (we invested in a good upright freezer) and/or made preserves. We grew and froze yellow and green beans, Brussels sprouts, red and regular cabbage and kale. We ate fresh off the vine tomatoes all summer and froze some, too. We canned bread and butter pickles, baby carrots, pickled beets. I will miss doing this with my recently departed husband this year but I look forward to passing on the fun and satisfaction one gets canning all those wonderful goodies.

We made tomato sauce a few years in a row. All those hours! All that mess! Tasted great but a lot of work for 12 quarts of sauce. Not sure I will do that again but I do make great green tomato ketchup.

My sister will can home made spaghetti sauce sometimes - and puts pureed carrots into it without telling my niece. It's a way to get a vegetable into her.

We cut up all the apricots last night and have two large Ziploc bags of them in the freezer. I don't have time to make jam this week, so I'll do it next week. I did get some apricots in the dehydrator last night and made some fruit leather. I'm going to try it tonight to see if it worked! smile

RR Joker: Yup, there are black raspberries. They are often confused with blackberries but, in fact, are smaller (like their red cousins) and the seeds are not as large as blackberry seeds. They taste a bit sweeter, as well.

I've got a peach bread recipe that you make a puree and then can freeze it to use in winter. I bet that would work with apricots too.
Note on freezing: we went to zip lock bags a few years back. Cheaper than containers and take up less space. I may get some ice cube trays to make GFCF pesto cubes then freeze them in bags. Got a bumper crop of basil right now and more in the CSA box each week.

Would love to have the peach bread recipe! I plan on canning some more this year as well. So far this year I have done a few jars of pickled jalapenos and zesty zucchini relish and have shredded and frozen tons of zucchini for future zucchini bread as well. Looking forward to when the tomatoes come in so I can do some diced tomatoes and salsa.

You can freeze cherry tomatoes to use either in stews, etc or for shish kabobs. The frozen tomatoes thaw as the meat and potatoes cook. No more mushy tomatoes falling off the skewers.

Now for the Peach Bread Recipe.

In a blender puree the following:
1 lb peaches (I leave the skin on)
1/2 cup sugar
1 tsp ascorbic acid (Fruit Fresh)
pinch of salt

This will yield approx. 2 cups of puree. At this point you can put it in a zip lock bag and freeze.

To make two loaves of bread combine:
1 1/2 cups sugar
1/2 shortening
2 eggs
1 batch puree (about 2 cups)
2 cups flour
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt
(optional 1 cup nuts)

Bake at 325 for 1 hour

It's not overly sweet but just right with a cup of tea, especially in the dead of winter.

Made the GFCF pesto tonight. Just pureed a lot of basil, some olive oil and nutritional yeast. The yeast adds a cheesy nutty flavor. I can't wait to give it to my daughter and have her try it!

Truffle... that is a fantastic recipe. I wonder if I could try the puree with a different fruit? My husband despises peaches... and tomatoes. Guess I can't complain, since it's only those 2 things. (although I love both of those!)
