I won't have a left over turkey carcass this year so my friend has volunteered to bring hers so I can make the turkey soup from Mary Beth's recipe - my husband's favorite.

Fire departments are gearing up for the first time deep fat fryer users who fill the pot with oil, get it real hot and put the turkey in. First time users - do it in the driveway rather than the back porch. Some of the best fires on youtube come from when the hot oil is displaced from the pot by the turkey, and comes into contact with the flame. https://www.youtube.com/watch?v=tSI79ZftCpU

My mother's turkey dressing. It truly is more of a casserole type dish, but is completely homemade. Cornbread, potatoes, chopped pickles, shredded turkey, and I don't know what else - but I look forward to that more than any other single dish all year.
She always makes extra, put back in a large bowl just for me to take home..... and it never survives the weekend!

And those of you deep frying your turkeys - watch for little kids - or even people in general. Years ago the nephew of friend of mine caught his foot on the corner of the fryer. Needless to say it was a horrible and life altering event.

Anyone tried the oilless fryers? I've heard they work well, but never have tried one.

For the last few years my brother has cooked the turkey in an oilless infrared fryer. It has always come out very good. Even the white meat is tender and juicy.

My daughter has / uses one, she has done potato wedges and sweet potato chunks in them with great success and cheese sticks (slightly less successful.) The recipes that came with it are pretty interesting - cake, cheesesteak, pizza.... I kind of feel like it's a novelty and probably won't get used much past maybe March.
I will also say, she dropped the basket and the handle cracked off; apparently that is a known problem with a lot of them. So just beware on that. Also it's pretty big / takes up a lot of counter space.

Tardy for the party, but...if you're deep frying your turkey first fill the pot with tap water. Insert turkey and allow excess water to overflow (do this outside or in a shower). Pour out water to bring it to the maximum fill level. Remove the turkey and mark the water level (use a marker on the outside of the pot). Pour out remaining water and completely dry the pot!! Now you can fill with oil up to the mark and fire it up. When you drop the bird, it won't overflow.
