I'm excited to can again this year. I've never canned salsa and I wonder if any of you have a great salsa and pasta sauce recipe for canning? I'm also going to do the Cowboy Candy. I'm usually just jams, jellies, bread & butter pickles & pickled beets but want to expand this year. I did do the Raspberry Jalapeno, Apricot Jalapeno and Blackberry Jalapeno jams for Christmas gifts last year.
I'm a water bath person and can't be trusted with pressure ca.... squirrel!!

my favorite salsa canning recipe is pretty simple:
1. get in car and drive to grocery store 2. go to the chip aisle 3. determine if i want mild, medium, hot, or burn my tongue off salsa 4. make selection 5. pay 6. drive home 7. open jar and eat it

I don't have any canning recipes but I suggest using red onion in your salsa. Yellow or white onions tend to end up pretty sweet while the red retain their sharpness after cooking and canning. Thanks. We tend to like the red the most anyway!

Julio's salsa is the best salsa i've ever eaten, hands down. (I think they're out of Del Rio, Texas.)

We were in a Rural King, and picked up a MrsWages salsa mix. It was easy to make and excellent, so much so that we went back for some more. Their website has some recipes, products, guides, etc. https://www.mrswages.com/ We've also seen it as other stores that have canning supplies including a True Value near us.

Canning tomato-based products in a water bath canner is iffy. Check with your local extension office before committing to going that route. They have very useful brochure (some with recipes) to keep everything safe. The Ball Blue Book is the way to go for recipes. Understood. I understand the difference and seriousness between what goes wb and what goes thru pc!
