Can anyone share their practices for accepting or declining checks that are payable to cash? Do you accept it with no regard to who issued it? Or do you require the check to be from the customer to the customer in order to accept it?

We accept it. It is essentially cash and can be cashed by anyone.

I do recommend requiring that it be indorsed by the holder before you cash it. It would not be required by the UCC, but if you want proof of who you cashed it for (in case there is a problem), the indorsement is best.
