State of confusion
OK - Talk to me like I am stupid please. I want to can about 16 pounds of venison. I have the jars and lids and rims, I have garlic and I have cubed all the venison in 1 1/2 to 2 inch cubes. I have no idea how to can them. I have the water bath kettle and stuff, and I hear you can do it in the oven, but have no idea how to do it. Keep in mind I don't know how to can anything. Please Help!

I do not do canning but curious as to what you would use the canned venison for?

You can use it for beef in almost any dish. Canned venison with noodles and gravy is awesome. Also you can shread for sandwiches very easily without thawing out and cooking first.

(Yes, I love venison but have never owned a gun or hunted in my life.... I should probably learn to hunt sometime)

Which is funny as I have always owned guns and only ate venison for the past few years! I thought they were for shooting at cans and targets!

We freeze. Never heard of canning it. But Google has several hits. Here is one.

Beagles, my sister used to prepare her canned venison in the oven. I have e-mailed her for instructions because I need to can some also. I will share if/when she gets back to me.

You'll want to use a preasure cooker rather than a water bath. The low pH requires a higher temperature and longer cook time. Head to the nearest mega-mart and get a canning guide by Ball or Kerr. They are great and run between 6-10 bucks (no pun intended).

I agree you should use a canner to can meat(vs. water bath). I don't think my mom ever canned deer, however, she used to can beef a lot and it is wonderful (very tender) in stews and beef & noodles, etc. This year my husband ground up all of his deer since we were running out of ground beef (usually buy 1/2 beef).

Canned venison is pretty gamey. It seems to excentuate the flavor. If you don't mind this, no biggie, but it the game flavor bothers you, try freezing.

Try freezing anyhoo Venison keeps nicely in the freezer and tastes a whole lot better when thawed and cooked than cooked and cooked and cooked

My experience has been exactly the opposite. The venison we canned has always been much better than what was frozen. It may depend on how it is prepared. We canned the "scraps" basically. The trimmings from the steaks, chops, and roasts - the stuff most people grind up. We used to use it in stews, or just cook it over an open fire when we were camping or having a cook out.

I haven't hunted (prefer archery over firearms) for several years which I guess is a waste since I live in "Whitetail Central".

I freeze all the steaks and grind a lot of burger mixed 1 part hamburger to 5 parts venison, then double ground. I wanted to try the canned because I hear it is so tender. I don't mind the game taste, it's actually preferred by my hubby to beef.

LOL at Andy (Oh DEER)

Maybe I should go buy a pressure cooker?

Or make the venison the CRA officer next month. That will put it under plenty of pressure!

i just give mine to my mother inlaw or gandma to can. my mother inlaw will put a piece of bacon in with the meat.
i love using it for bbq's. very quick and easy. oh, and very tasty.
my roomates in college loved it when i would bring a couple of jars in.
