first lily pad on the right
1 can black beans, rinsed and drained
1 can corn, drained
1 large can cut tomatoes (NOT drained)
1 green pepper chopped
1 small can chopped jalapenos
1/2 c. Italian salad dressing
Lime juice, to taste

Throw everything into a bowl and stir. Viola! Rockin' Salsa.
You could substitute fresh tomatoes if desired. Also, you can substitute chopped onion in place of the green pepper (some people don't like that much green pepper taste).

Yummy!

Ok here's one I made up after eating crab cakes at the Bank's Christmas banquet. I made it for a luncheon here one day and people ask me to make them and bring them on a regular basis.

Sheldon's Fried Crab Balls

2 Boxes of Stove top dressing

1 Large package of imitation crab meat (or the real [censored] if you can afford it.

a bundle of green onions

a stick of butter

Some Tony chachere's or some seafood seasoning.

about a half of cup of flower

about a half a cup of cornmeal

Make stuffing mix as directed and add butter and dice up onions and add to water as boiling before you add stuffing mix. Dice up the entire package of crab meat and mix in thoroughly.

Start heating up deep fryer in the meantime.

Now refegirate the stuffing/crab meat mixture until completely cooled and dense. Put flower and cornmeal and desired amount of seasoning in a medium sized paper bag. Take out cold stuffing and roll into about 1 1/2 to 2 inch diameter balls and make sure and pack them tightly. Put 3 or 4 balls in the bag with flower and cornmeal at a time and shake thoroughly.

Now deep fry your balls until they turn a delicious golden brown. Let cool and serve. Best served fresh!

How do you guys remember these recipes off the top of your head? I'll have to go home and get my recipes and send a few from there, I just can't remember them! LOL

I cook almost every meal I eat...

I love to cook and I've been messing around in the kitchen since I was probably 5. It's my biggest hobby next to DJing.

I've discovered a new love for cooking over the last few years, but I just can't remember recipes. I have a strange memory where I know my 8th grade locker combination but I can't remember how much chicken broth was in the rice last night. LOL

Yea I haven't actually followed a recipe for a long time... I just recall the good parts and use my cooking sense to make it my way LOL. Cooking is a science... just not an exact science. I don't measure all the time either unless I have to.

1 can tomato sause, mexican hot style

Open both cans and pour into the same bowl and mix. You can get both at dollar general in the mexican section.
