I just watched Fried Green Tomatoes last night, and think that would be a good addition to Super Bowl.
How about adding spinach dip, Velveeta and Rotel with taco seasoning added in.
Make jello shots: lime and orange with tequila; grape with rum; strawberry with vodka.

I found this recipe this morning and thought it would be a good addition to your party.
Touchdown Taco Dippers
1 T vegetable oil 1 package (1 oz) Lawry's Taco Spices & Seasonings 1/2 # ground beef 1 container (13.8 oz) refrigerated pizza crust 12 mozzarella string cheese sticks 1 jar (16 oz) prepared salsa
1) Combine oil with 1 t taco spices & seasonings; set aside. In a saucepan, heat salsa with 1 t taco spices & seasonings; set aside.
2) In a non-stick skillet, brown ground beef with remaining taco spices & seasonings; drain if desired.
3) Roll pizza crust into 10X18-in rectangle. Cut in half lengthwise, then cut each half into 6 strips. Arrange 1 T beef mixture and 1 cheese stick down center of each piece. Fold edges over, then pinch to seal tightly.
4) Arrange dippers on greased baking sheet, seam-side down; brush tops with oil mixture. Bake at 400 F, 10 minutes ur until golden. Serve with salsa.

This Chipotle Sauce is the bomb. It makes a great BBQ sauce for chicken (would be great for wings). I have eaten it with everything from Turkey to pork chops and it is great. Beware 1 or 2 chipotle chilis doesn't look like much but they add a lot of heat.
Chipotle Sauce: 1 medium onion, minced fine 4 medium cloves garlic, minced fine 1-2 canned chipotle chilis, depending on desired spiciness, minced fine 3 TBS prepared Dijon mustard 3 TBS tomato paste 3 TBS molasses 1.5 cup + 1 TBS chicken broth 1 TBS chopped fresh oregano salt to taste Directions:
Mince onion and garlic and let sit for 5 minutes.
Heat 1 TBS broth in a stainless steel skillet over medium heat. Saute onion in broth for 5 minutes stirring frequently.
Add garlic and continue to saute for another minute.
Add rest of ingredients and simmer for about 15 minutes, letting it thicken slightly.

The Chipotle Sauce does sound good! This is one of my favorites:
WHITE TRASH DELIGHT1 ( 7 oz. ) can of spam 2 hard-boiled eggs 1 teaspoon chopped dry onion 2 tablespoons dill relish 1/4 cup Miracle Whip or mayo 1/2 cup Velveeta cheese, cubed 4 hamburger or hot dog buns dump spam and hard-boiled eggs into a bowl. Mash 'em with a fork. Then dump in the onion, relish, mayo and cheese. Stir it up and fill the buns with the mix. Wrap 'em up in aluminum foil and put 'em on a baking sheet. Bake at 350 degrees for about 20 minutes - 'til the cheese is melted. Makes 4 servings - unless one feller is a pig and eats 'em all.

I was thinking more on the lines of seafood. It's just hubby & I so I thought maybe BBQ shrimp, crab legs, veggies, cheese.
I'm really glad for the Mexican food recipes. It looks as though we will be hosting a Mexican-themed engagement party for our son and his fiance this spring, so they will be a great help.
Does anyone have any quesedilla (sp???) recipes?
