is it usual activity for a corner liquor store to be cash intensive. $1000 in ACH and $5000 in cash.

Cash in or out. Cash in would be expected depending on size and location. Cash out would suggest they are cashing checks and may be an MSB. ACH is the same thing - is it in or out? ACH coming in means they are possibly selling money orders or have an ATM machine on premises. Where and who are they originating from or to?

Most of our liquor stores are cash intensive and most are check cashers.

I think you need to consider the size of the store and where they are physically located. It is feasible for them to do this much business if size & location match what you're seeing. If you do not know where they are - a driveby may be necessary. I've taken pictures of businesses to add to my Due Diligence reviews before.

I'll just chip in my agreement.
Liquor Stores are typically cash intensive & I would guess your ACH deposits are from credit & devit card sales. Just ask yourself if the amount of cash (and total deposits) make sense for the store size, location, market served, etc.
Also - you definitely want to check their deposits for 3rd party checks to determine if they are a check casher & MSB
