1026.43 says a creditor must verify income--but also says a creditor MAY use tax statements etc. Am I right in my interpretation that a creditor does not have to use all documentation such as tax returns, pay stubs, etc? Is it ok to use current pay stubs if you have also obtained length of time on the job and a "Good" rating of the employees likelihood of continued employment?

IMO, yes. Tax returns and the like are typically used for self-employed folks where you don't have paystubs.
