dreaming of a warm beach......
Trying to decide what to make for supper tonight. I have a few thawed chicken breasts. I think it will be chicken something for supper.

What is everyone else having?

Taco Salad - soooooo easy.

Recipe:

Brown ground beef, season as desired (may substitute ground turkey or beans.) Layer tortilla chips, lettuce, protein, and top with cheese, onions, olives, salsa, guacamole, and/or sour cream. Ingredients may be added or deleted as desired.

FWIW, I find the Tostitos Gold chips work best for this, and I usually use Bush's Pinto Beans.

I make a really simple chicken dish that is so good. Basically, it's chicken parmegian (sp?) without the breaded chicken. I just use a jar of spaghetti sauce (I like 3-cheese flavored) and pour about 1/2 the jar in the bottom of a greased baking dish, then I put the chicken breast in the dish, then pour the rest of the spaghetti sauce over the top. Bake uncovered for an hour or so on 350. Right before it's done, I sprinkle a little bit of parmesan or Romano cheese on top (the shredded stuff in a plastic container from the deli section not the grated stuff in a green canister) over the top and let it melt. I serve it with Rice or Pasta.

Super easy and really good.

Oh, great. A food thread when I'm in week 3 (of 12) of no solid food!! Tonight will be soup, same as I had for lunch and dinner for the last 20 days. Can someone please have a steak or cheeseburger for me tonight?

Why are you doing 12 weeks of no solid food???? Doesn't sound very tasty!

I'll drink a gallon of wine for you tonight as well. I know it's liquid, but I'm sure you want more than you can have, and I have access :P The bank is hosting an event at the wine club tonight and with submission, and the new HMDA goober on my desk, I'm really looking forward to that wine!

Have you tried walking tacos? Put all of the taco ingredients in a snack/big bag of doritos. Plastics spoons and it is an almost mess free supper.

Pasta bar. Cook up your favorite pasta. Empty the fridge of various veggies and bits of meats. Put out a couple of different jars of sauce.

Each one picks their ingredients which are sauteed in a bit of garlic butter. Add their choice of sauce and serve over pasta. It only takes a minute or two per person and it can really be fun!

This reminds me of my mom's specialty - "Friday Suprise". Throw all the leftover containers from the fridge into a cooking dish with some cooked elbow macaroni. Bake for about an hour & throw on some cheese near the end. Sometimes it was really good . . . sometimes not so much

I had French Dip at the diner and gelato at the ice cream shop! Got home just in time for the snow storm.

We had vegetable pakoras, tandoori chicken, pakora curry, onion kulcha, dal makni, birhani, and mango lassi. Love Indian food. Leftovers for lunch today.

We had venison pot roast, the last of the green beans from last summer's garden, and biscuits. I sure do hope spring gets here soon, our freezer is running low on veggies!
